Job Description:
* Prepare and assemble hot and cold food items, including beverages, following standardized recipes and production requirements to ensure quality and consistency.
* Stock, rotate, and sanitize nursing pantries and bulk nourishments, maintaining accurate inventory records and billing documentation.
* Serve meals on tray lines, record food temperatures, and deliver trays to patients using proper identification protocols and isolation procedures.
* Maintain cleanliness and organization of workstations, floors, and equipment, using cleaning chemicals safely and effectively according to required concentrations.
* Operate dishroom equipment and café registers, process transactions accurately, and monitor sanitation logs and temperature records, taking corrective actions as needed.

The Nutrition Assistant supports the delivery of nutrition services in compliance with Title 22, California Code of Regulations, Section 54333, by assisting the Registered Dietitian in preparing, documenting, and monitoring participant nutritional care. This position helps ensure all dietary services meet the individualized needs of participants and comply with California Department of Public Health (CDPH) licensing requirements.
Essential Duties and Responsibilities
Assist in collecting nutritional data for initial and periodic assessments, including dietary preferences, allergies, and feeding needs.
Support implementation of care plans by preparing charts, tracking nutrition-related goals, and assisting with progress monitoring.
Assist in the preparation and distribution of therapeutic and modified diets consistent with each participant's care plan and dietary orders.
Monitor food safety practices and sanitation procedures.
Maintain participant nutrition documentation, meal counts, and records as required for program compliance and audits.
Provide nutrition-related group education under the direction of the dietitian, consistent with the participant's functional level.
Report significant changes in food intake, weight, or physical status to the Registered Dietitian and interdisciplinary team.
Collaborate with kitchen staff and the food service vendor to ensure proper meal delivery, portion control, and therapeutic diet accuracy.
Assist in maintaining menus and verifying adherence to dietary guidelines, cultural considerations, and regulatory requirements.
Participate in interdisciplinary team (IDT) case conferences when needed to support nutrition-related goals and service delivery.
Qualifications
Minimum Education and Experience:
High school diploma or equivalent required.
At least two years of experience in a healthcare or nutrition setting (e.g., ADHC, skilled nursing, food service in elder care).
Coursework in nutrition, food science, or health preferred.
Licenses/Certificates:
Valid California Food Handler Card or ServSafe Certification (per Cal. Health & Safety Code §113947).
CPR and First Aid certification (preferred, may be required by employer).
Skills and Competencies
Basic understanding of therapeutic and modified diets (e.g., diabetic, low sodium, mechanical soft, puree).
Familiarity with Title 22 ADHC regulations, especially Section 54333 related to nutrition services.
Ability to communicate clearly with elderly or disabled adults, caregivers, and interdisciplinary staff.

Working Conditions

Prepares milk orders for routes.
Follows additional instructions from the Central Kitchen and management.

Qualifications
EDUCATION &/or EXPERIENCE:

LICENSES OR CERTIFICATES:
Food Handler's certification required upon hire (ServSafe, National Registry of Food Safety Professionals, or other approved certification).
Current CPR and First Aid certification within six (6) months of hire.
PRE-SCREENING REQUIREMENTS:
Requires clearance of a DOJ and FBI criminal history background check.
