In the spring of 1978, businessman Louis Kane was strolling through Boston's historic Faneuil Hall Marketplace when he noticed a display showcasing a new line of French bakery ovens.
Shaich, who had set up and operated a non-profit convenience store as an undergraduate, was managing a Cookie Jar franchise in Boston in 1981.
In 1983, Au Bon Pain centralized dough production at a Boston facility.
By 1984, sales of loaves and croissants attained $1.7 billion in United States sales.
By 1985 the company's more than 30 cafés in the northeast United States were generating an estimated $15 million in annual revenues.
Au Bon Pain common made its debut June 6, 1991, with 1.875 million new shares at $9 per share, rising to over $13 by that fall.
In 1992, the company completed its installation of a customized, chainwide computer network.
In 1993, Au Bon Pain paid $24 million for Missouri's Saint Louis Bread Co., a 20-unit chain of bakery cafes in and around the Midwestern hub for which it was named.
Menu updates included bagels, new hot sandwiches, and soups in a fresh-baked "bread bowl." In 1995, Au Bon Pain agreed to make Peet's Coffee, headquartered in Berkeley, California, its exclusive brew.
