Job Description
We are currently seeking a Baker to join our team in New York City. The Baker at Tallow Steakhouse is responsible for preparing and producing house-made baked goods and desserts that support the restaurant's overall culinary vision. This role plays a critical part in delivering a refined guest experience through consistent execution, attention to detail, and respect for classic techniques. The ideal candidate has a strong foundation in baking, a passion for scratch production, and an appreciation for high-quality ingredients and thoughtful presentation.
KEY RESPONSIBILITIES:
Prepare and bake a variety of house-made desserts, breads, and baked components according to established recipes and standards.
Follow precise measurements, techniques, and production timelines to ensure consistency in quality, flavor, and presentation.
Maintain cleanliness, organization, and food safety standards in the bakery and prep areas at all times.
Work closely with the Chef and kitchen team to support service flow and daily production needs.
Assist with plating, garnishing, packaging, and final presentation for service as needed.
Properly store, label, and rotate ingredients and finished products following FIFO standards.
Uphold Tallow Steakhouse's commitment to craftsmanship, quality, and execution in every item produced.
Maintain a positive, team-oriented attitude in a fast-paced kitchen environment.
MINIMUM QUALIFICATIONS:
Previous experience in a bakery, pastry, or professional kitchen environment preferred.
Working knowledge of fundamental baking techniques, equipment, and ingredients.
Ability to follow recipes accurately and work efficiently with minimal supervision.
Strong attention to detail and pride in producing consistent, high-quality products.
Passion for baking and eagerness to learn and grow within a steakhouse-driven culinary program.
Ability to work independently and collaboratively as part of a kitchen team.
Strong time management and organizational skills.

Identify and select ingredients to follow recipes
Scale given recipes to match production needs

Building composed desserts
Making housemade jams, fillings, mousses, etc.
Topping, finishing, and decorating desserts
Adhere to cleanliness and sanitation standards (FDA Guidelines)

This role is ideal for someone who is interested in learning about our Danish heritage and learn about real Danish breads and pastries.
RESPONSIBILITIES
Prepare a variety of breads, ryes, rolls, and pastries according to our traditional Danish recipes
Observe and maintain the quality of products being baked, and adjust oven temperatures, baking time accordingly
Measuring and combining ingredients and using mixers, heat sources, and other equipment
Checking quality of raw materials to ensure that standards and specifications are met
Follow portion standards
Monitor inventory of ingredients for production
Properly label and store ingredients
Check equipment to ensure that it meets health and safety regulations
Maintain a clean and orderly station and adhere to health and safety standards
QUALIFICATIONS & REQUIREMENTS
Completion of a Culinary School program or apprenticeship preferred
0-3 years of professional baking experience preferred. Experience with Danish or Scandinavian baking methods is a huge plus!
Experience with mixing, bench work, proofing, and baking bread as well as working with laminated doughs for our breakfast pastry production
Ability to work overnight, weekends, and some holidays
Able to lift 50+lbs without restrictions
The ability to stand and/or bend for extended periods of time to perform essential job functions
Basic math skills
Excellent time management skills
Thoroughly follow company procedures according to health and safety standards
