The Baker is responsible for preparing and producing baked goods and pastries to be served throughout the park as well as specific occasions.
Responsibilities:
Conducts all baking and pastry production, including scaling, measuring, traying, rolling, baking, cooling, freezing, and general finishing.
Adheres to established recipes and production guidelines, meeting all production requirements.
Directs the activities of Assistant Bakers and Bakery Cleaning Assistants.
Maintains inventories, including counting of ingredients, as well as establishing order amounts to maintain required product levels.
Adjusts drafts or thermostatic controls to regulate oven temperature.
Provides guest service according to Six Flags standards when serving the guest or working with subordinates, including initiating guest interactions, answering questions and giving directions.
Maintains cleanliness and safety in assigned work area and performs all duties in compliance with Six Flags Safety guidelines and requirements and reports all unsafe or unusual conditions to supervision.
Meets scheduling availability requirements, including nights, weekends, and holiday periods to meet business needs.
Meets Six Flags attendance requirements as outlined in Six Flags attendance policies.
Adheres to Six Flags Rules of Conduct including specific costuming and grooming standards as outlined in Employee Guidelines and other park/division specific policies and procedures.

Manages daily production and communication of product counts with Coaching team.

Prepare and bake bread items including loaves, buns, rolls, cookies, etc.
Daily preparation of seasonal fresh fruit for pies and toppings.
Clean all bake related machines, workstations, transit trays, and instruments too large for dishwasher.
Responsible to properly label, organize and rotate bake ingredients in freeze and storage areas; Rotates bake inventory (merchandise and product supplies) to maintain freshness and quality, make products fresh daily.
Receive orders, check invoices, and put deliveries away as needed.
Prepare kitchen for the day including making sure everything is secure, lighting the oven, etc.
Notify the Coaches of any food quality issues, inconsistencies of product with recipes, low inventory, etc.
Maintain a clean and sanitary bake area and station at all times.
Comply with established weight and measures, health, sanitation, and safety policies, procedures, and guidelines.
Protect the Brand through promoting and providing extraordinary service when interacting with team members and guests.
Demonstrate dependable leadership qualities to work primarily unassisted, and is proactive to escalate matters as needed.
Flexible to cross train in other functions for back of the house/kitchen areas.
Must be available to work morning, afternoon, and evening shifts; includes weekends and holidays.
SKILLS AND EXPERIENCE REQUIRED:
At least 1 year prior work experience as a cook, baker, or enrollment in a culinary program.
Ability to use scales, thermometers, measuring, and divide and multiply recipes.
Good organizational, communication and problem-solving skills.
Experience working with baking equipment including oven, mixers, etc.
Clear understanding of kitchen and food safety guidelines.

Our bakery is in open view to the public, and our bakers are encouraged to interact with customers and share their love and knowledge of bread and baking, because of this all hourly employees are part of the employee tip pool. Knowledge and Experience
-3 + years professional bread and pastry experience (emphasis on croissant and sourdough bread)
-clear knowledge and firm understanding of fermentation, stages of bread production and efficiencies in a commercial bakery setting
-experience as a shift lead or manager in a bakery setting
-experience training new bakers
-experience with croissant pastries (proofing and baking) and high hydration/whole grain sourdough breads
Responsibilities
operational:
-manage a crew of to 4-6 morning bakers
-ensure timely breaks and timely production
-ensure quality of baked goods and breads on a daily basis, provide feedback to bakers
-provide training as needed to new bakers
educational/creative:
-help plan the bread schedule, coordinate bread specials and test new breads
-edit and maintain bread recipes, tweak formulas as needed to reflect changes in flours and environmental conditions
-communicate with rest of bakery team regarding specials, inventories, and issues using Slack
-communicate with kitchen department/CDC regarding bread usage and specials
administrative:
-meet regularly with Bakery Dept Head to communicate personnel and quality issues
-communicate on a weekly basis with Pastry lead
-scheduling and ordering of ingredients as needed
-inventorying and ordering of bulk flours, nuts and seeds from our suppliers
Early morning availability is required, baking shifts generally begin at 3 AM.
