Job Summary
Under general supervision, the Combination Worker follows standard procedures to accomplish assigned tasks. Employees in this job classification are assigned duties to assist bakers in producing and packaging bakery products and decorators in decorating product. This job classification also includes duties required to maintain the current cleaning and sanitation standards of the Production Bakery.

Compensation
The range displayed reflects the range the company reasonably expects to pay for the position. The actual compensation offered to the selected individual(s) will depend on their relevant education, training, or experience, among other bona fide factors.

A Combination Worker must be physically present at his/her work site to perform all job tasks. This job classification includes a variety of job tasks that support the Production Bakers, Machine Operators, and Decorators. Job tasks do vary between the day and night shifts. The day shift performs various assigned tasks to assist Bakers, Machine Operators, and Decorators as well as performing some clean up duties. The night shift performs cleaning and sanitation of equipment, pans, and the production bakery facility. The night shift also assists in packaging of bakery products Combination Workers are prohibited from scaling and mixing ingredients, setting up/adjusting controls on machinery, operating ovens, and manipulating icing with bow knife or pastry bag to decorate bakery products. The following provides examples of specific job tasks but is not all-inclusive as a Combination Worker may be required to perform additional duties, as assigned:
The following are examples of work tasks generally but not exclusively performed by night shift workers as part of a crew to maintain the cleanliness and sanitation of equipment, the production facility and offices:
Maintains cleanliness of Production area. Cleans floors, plumbing, fixtures, drains, sinks, utensils, soiled areas on walls, ingredient storage areas. Sanitizes food contact surfaces.
Cleans all rolling waste bins and ingredient containers.
Dumps waste bins in compactor or dumpster and hoses out bins.
Checks and dumps inside and outside recycling bins and cleans, as needed.
Maintains cleanliness of floors.
Sweeps floors with push broom and dustpan and/or uses vacuum.
Uses mobile hose on reel or fixed hose to spray floors with soapy water.
Cleans floor under equipment in confined spaces.
Operates floor machine in open areas.
Uses mop to scrub heavily soiled areas.
Checks for standing water and mops/squeegees excess water and/or sets up floor fans to dry wet floor areas.
Maintains cleanliness of loading dock. Removes pallets and straps. Sweeps up debris and mops where needed.

Cleans lights and panels.
Sweeps and mops mezzanine and stairs, brushes off tops of Mimax silos and wipes down guard rails.
Cleans conveyor rollers and belts using air hose and hand brush, hoses down spiral cooler, squeegees out Adamatic proofer-retarder and cleans interior of proof boxes.
Cleans all hand sinks and production sinks. Fills soap, sanitizer and towel dispensers.
Cleans and sanitizes restroom toilets, sinks, floors and walls. Empties trash and cleans containers.
Checks and fills paper towel, soap, toilet paper and seat cover dispensers.
Cleans and organizes Janitorial Room. Organizes and properly marks products. Wipes down shelves.
Cleans Break Room by wiping down tables, counters and sink. Cleans microwaves, coffee pots and refrigerator.
Uses mop to clean floor.
Fills soap and paper towel dispensers.
Cleans Offices by emptying trash containers, vacuuming, dusting and wiping down walls, doors and woodwork.
Cleans Packaging Room, sweeps floors, organizes stock, cleans conveyors and equipment and returns all tools to toolbox.
Feeds dirty pans from bins into pan washing machine.
Retrieves washed pans from washer and stacks in bins.
Maintains employee entrance, parking lots, outside break areas, and garbage chute area.
Cleans floor grates. Moves laundry bins and cleans beneath. Cleans baseboards and under all workbenches.
Uses manual or electric pallet jack to transport equipment, supplies and/or bins of pans.
Cleans exterior and interior of rack ovens, and exterior of proof boxes.
Disassembles, cleans, and reassembles equipment.
Cleans inside and outside of icing machine.
Uses brush to clean air filters. Polishes tunnel oven and cleans Hobart tower.
Cleans all curtains, windows and door tracks in bakery.
The following are examples of work tasks generally but not exclusively performed by both day and night shift workers if working in the Packaging Department:
Loads bundles of cardboard into magazine of carton/box erector.
De-pans baked product (remove from pans) or prepares product for packaging.
Manually loads trays of product on L-bar line into boxes for shipping.
Lines boxes with plastic bags and fills with product.
Weighs and adjusts number of product for packing.
Manually stacks boxes of product to build pallet.
Activates automated pallet turntable to wrap and secure palletized load for shipping.
Operates manual or electric pallet jack to transport load of product from packing area to freezer.
The following are examples of work tasks generally but not exclusively performed by day shift Combination Workers in assisting Bakers, Machine Operators and Decorators:
Pushes/pulls manual pallet jack to transport 40 and 50 lb. sacks of dry ingredients bins filled with baking pans, and equipment.
Pours bags of dry ingredients into Mimax silos.
Loads mixing bowls into automatic washer and removes when clean.
Performs duties at Depositor. Separates and inserts paper or plastic cooking liners/trays into pans.
Feeds sheet pans onto conveyor for filling and pulls filled trays and/or pans from conveyor belt to slide onto shelves of oven racks .
Performs duties at Depaner. Manually inverts and taps pans to remove baked product.
Loads magazine of tray former or carton formers with bundles of cardboard. May stack trays as they are formed.
Monitors product traveling on conveyor lines and adjusts product to assure it is moving properly through the production process.
Assists Decorators by preparing products and ingredients.
Transports product by pushing bakery racks, storage racks, two tier carts, and flat carts.
With co-worker, pushes and pulls to transport and maneuver half sheet tray former machine.
Dismantles, cleans and reassembles production machinery such as icing machine. Assists in moving tables to reconfigure work area.
Washes and sanitizes pans, utensils and equipment.
If certified, may operate stand up forklift.
Qualifications
All applicants must be at least 18 years of age. Applicants must have a High School Diploma or GED and have the ability to receive direction and perform duties. Applicants must be flexible in changing work priorities and act in a responsive manner to requests. Applicants must be able to communicate effectively and handle multiple tasks simultaneously within established timelines. Applicants must have the ability to work with a team or independently in an accurate and timely manner. Employment is contingent upon passing a drug screening test and passing a pre-employment physical ability test, consistent with the physical demands of the job.
Work Hours
The Production Bakery may be operational up to 7 days per week and workers may work day or night shifts depending upon production needs. The worker's schedule may vary and is posted by noon on the Friday before the next workweek. Combination Workers are scheduled to work 8 hours per day, 5 days per week, which may include weekends. Overtime is mandatory and may include working a 6-day workweek.

Sitting:
The only job task that requires sitting is the operation of the riding floor machine. Operation of the floor machine is generally performed by a senior Combo Worker on the night shift. No other job duties may be performed while sitting as this is a production environment and a stool or chair would create a hazard to other workers.

Environmental Conditions
Work Space: All work is performed indoors within the 60,000 sq. ft. production bakery facility with the exception of cleaning the outside loading dock area. The Combo Worker may perform work duties anywhere within the Production Bakery facility to include the Administration Offices, Break room, Restrooms, Pan Room, Cake Room, Packaging Room, Warehouse, Spiral Freezer, Freezers, and Refrigerators and in the oven area.
Work Surfaces: Performs job duties between floor level and 64 in. height of bakery rack. Many job duties performed to assist bakers are on a worktable or conveyer line at a height of 36 in. When performing cleaning duties, works on surfaces of floor, toilets, sinks, walls, windows, and plastic refrigerator curtains. Walks and stands on concrete flooring and occasionally on metal floor of stairs and mezzanine.
Temperature: The majority of job duties are performed within the production bakery area that is equipped with heaters and evaporative coolers; however, temperatures may range from 50º - 90º depending upon the outside temperatures and product being baked. If assisting Decorators in the Cake Room, temperature is maintained at between 65º and 70º. Workers periodically walk into freezers at -10º, spiral freezer at -20º and the refrigerator at 35º. If loading pan washer, worker performs duties in an enclosed room that is both warm and humid. If working in the Packaging Room, temperature is maintained from 50º - 55º. If performing cleaning duties by the ovens, the workspace is warm and humid.
Moisture: Some contact with liquids if washing floor, toilets, sinks, utensils, and worktables.
Chemicals: OSHA approved soaps, degreasers, sanitizers and cleaners.
Noise / Vibration: Moderate noise level in production bakery due to stacking of pans, operation of ovens and conveyor lines. Ear production is worn if working in the pan washing room due to noise level of the pan washer.
Odors: Odors are generally pleasant from bakery products.
Hazards: Burns from hot ovens, burns from 180º water hose, slip/falls on wet or greasy flooring, falls from ladder work, and potential for hitting head when working under stationary equipment.

A Combination Worker must be physically present at his/her work site to perform all job tasks. This job classification includes a variety of job tasks that support the Production Bakers, Machine Operators, and Decorators. Job tasks do vary between the day and night shifts. The day shift performs various assigned tasks to assist Bakers, Machine Operators, and Decorators as well as performing some clean up duties. * Washes and sanitizes pans, utensils and equipment.
* If certified, may operate stand up forklift.
Qualifications
All applicants must be at least 18 years of age. Applicants must have a High School Diploma or GED and have the ability to receive direction and perform duties. Applicants must be flexible in changing work priorities and act in a responsive manner to requests. Applicants must be able to communicate effectively and handle multiple tasks simultaneously within established timelines. Applicants must have the ability to work with a team or independently in an accurate and timely manner. Employment is contingent upon passing a drug screening test and passing a pre-employment physical ability test, consistent with the physical demands of the job.
Work Hours
The Production Bakery may be operational up to 7 days per week and workers may work day or night shifts depending upon production needs. The worker's schedule may vary and is posted by noon on the Friday before the next workweek. Combination Workers are scheduled to work 8 hours per day, 5 days per week, which may include weekends. Overtime is mandatory and may include working a 6-day workweek.
Physical Requirements
Standing:
Frequently to continuously stands on concrete or non-slip tile flooring up to 6 hrs. per shift in performance of the majority of job tasks. The frequency of sustained standing depends upon job task being performed. Standing may be intermittent with two to five steps of walking when performing production line tasks such as depositing, depaning, packaging, feeding or retrieving pans to/from pan washer, etc. Individual anti-fatigue rubber mats are available. Stands up to 4 hrs. per shift, intermittent with walking 5 - 250 ft., when performing many of the cleaning and sanitizing duties during night shift.
Sitting:
The only job task that requires sitting is the operation of the riding floor machine. Operation of the floor machine is generally performed by a senior Combo Worker on the night shift. No other job duties may be performed while sitting as this is a production environment and a stool or chair would create a hazard to other workers.
Walking:
Occasionally to frequently walks up to 4 hrs. per shift at a moderate to brisk pace on even, concrete or non-slip tile flooring intermittent with standing. The distance walked depends upon job task being performed. Walking may only be 2 - 5 steps within the immediate work area when performing production tasks such as depaning, packaging, feeding or retrieving pans, etc. The distance walked may be up to 250 ft. before becoming intermittent with standing if performing cleaning and sanitizing duties and to transport product from warehouse area to production area.
Lifting/Carrying:
0 - 10 pounds:
Continuously lifts items weighing up to 10 lbs. such as baked products, stacks of round pans and sheet baking pans, utensils, cleaning supplies, and rubber mats (36 in. by 40 in.). The majority of lifting is at waist level with some lifting from floor to waist and some lifting to a maximum of 64 in. (top shelf of an oven rack). Items lifted may be carried 2 - 10 ft. with a maximum carry of 250 ft. Lifts and carries cleaning items such as broom, dustpan, mop, hand brush, cleaning rags and supplies if working night crew.
11 - 25 pounds:
Occasionally to frequently lifts items weighing up to 25 lbs. and carries 3 - 50 ft. Lifts items from floor to height of 64 in. to pull filled pans from depositor conveyor line and place on shelves of baking racks, lifts totes of baked products from floor to waist level and carries up to 10 ft. to place on packaging line, moves boxes of product from packaging line and carries up to 10 ft. to build pallet of product for shipping (pic. #14), lifts stacks of dirty and/or clean pans and carries up to 5 ft. to load and unload pan washer, lifts to empty trash containers and lifts/carries cleaning supplies, if working night crew.
26 - 50 pounds:
Occasionally lifts items weighing up to 50 lbs. from floor to waist level and carries up to 10 ft. in performance of duties. Lifts boxes weighing up to 36 lbs. from waist level conveyor line and carries up to 10 ft. to build pallet of product in packaging room (pic. #14), lifts bundles of cardboard and carries up to 10 ft. to load magazine of carton or baking sheet former, lifts 40 lb. buckets of product from floor and carries up to 10 ft. to place on 36 in. work counter, lifts 50 lb. bags of dry ingredients and carries 2 - 5 ft. to pour into hopper or to place on wheeled device to transport, lifts and carries 8 ft. extension ladder, lifts empty pallets and pushes up to 10 ft. to clear work area, and lifts garbage bin on wheels to dump.
51 - 75 pounds:
Infrequently lifts bucket of honey weighing 60 lbs. and carry 1 to 2 steps to place on wheeled device.
76 - 100 pounds:
Infrequently co-lifts 80 qt. mixing bowl filled with icing weighing 180 lbs. from mixer and carries 1 to 3 ft. to place into bowl stand.
Pushing / Pulling:
Frequently to continuously pushes/pulls with light to moderate force to perform the majority of work tasks. Pulls pans from bins and pushes to feed baking pans onto conveyor lines. Pushes/pulls pans to load and unload pan washer. Pushes/pulls to access and load cardboard into magazine of baking sheet former and/or carton former (pic. #11). Infrequently to occasionally pushes/pulls with moderate to heavy force to operate manual pallet jack to move bins of pans, equipment, and pallets of dry ingredients weighing up to 2,500 lbs. note: Electric pallet jack may or may not be available for use on the floor. Only the manual pallet jack may be used in mezzanine. Pushes/pulls with moderate to heavy force to move work tables in Cake Room. Pushes/ pulls with heavy force to move and maneuver half-sheet former machine with coworker.
Infrequently pushes/pulls with heavy to very heavy force to push 300 or 400 liter mixing bowls on wheels weighing up to 600 lbs. Pushes/pulls manual pallet jack to move bins of pans, equipment (pic. #8), and pallets of ingredients weighing up to 2,500 lbs. Note: Electric pallet jack may or may not be available for use on the floor. Only the manual pallet jack may be used on the mezzanine.
Climbing:
Infrequently climbs in performance duties. Climbs 12 steps to reach depositor hopper and 30 steps to mezzanine. Climbs 8 ft. extension ladder and 7-step ladder on wheels to perform cleaning duties.
Balancing:
Infrequently to work on ladder and climb stairs to mezzanine and depositor.
Frequently balances pans filled with liquid product when pulling from depositor line and placing on shelves of baking racks.
Bending/ Stooping:
Occasionally to frequently bends from 45 - 90º at the waist intermittently or repetitively depending upon task being performed. Bends repetitively when pulling sheet pans from or loading on lower shelves of baking/storage racks. Bends repetitively to load and unload pan washer. Bends to stack boxes when building pallets of baked product. Bends repetitively to perform cleaning tasks such as washing walls and guardrails, equipment, conveyor lines, toilets, sinks, floor grates etc.
Twisting at the waist:
Frequently twists at the waist in performance of production and cleaning duties. Performing conveyor line work at a production pace makes it difficult for worker to pivot feet to reduce twisting at the waist. Cleaning duties also require worker to twist repetitively at the waist.
Bending at the neck:
Frequently to continuously flexes at neck to look downward in performance of production and cleaning duties.
Infrequently to occasionally extends neck to look upward in performance of production and cleaning duties.
Twisting at the neck:
Frequently twists at neck to perform production line duties such as feeding pans onto conveyor lines and pulling product from conveyor lines. Twists at neck to perform cleaning duties.
Squatting / Kneeling / Crouching:
Occasionally to frequently squats and/or crouches to perform cleaning and sanitizing duties at below waist level. Squats to lift heavier items such as bags of ingredients to pour into silo, mixing bowls to place in washer, and garbage bins to dump into garbage shoot.

Environmental Conditions
Work Space: All work is performed indoors within the 60,000 sq. ft. production bakery facility with the exception of cleaning the outside loading dock area. The Combo Worker may perform work duties anywhere within the Production Bakery facility to include the Administration Offices, Break room, Restrooms, Pan Room, Cake Room, Packaging Room, Warehouse, Spiral Freezer, Freezers, and Refrigerators and in the oven area.
Work Surfaces: Performs job duties between floor level and 64 in. height of bakery rack. Many job duties performed to assist bakers are on a worktable or conveyer line at a height of 36 in. When performing cleaning duties, works on surfaces of floor, toilets, sinks, walls, windows, and plastic refrigerator curtains. Walks and stands on concrete flooring and occasionally on metal floor of stairs and mezzanine.
Temperature: The majority of job duties are performed within the production bakery area that is equipped with heaters and evaporative coolers; however, temperatures may range from 50º - 90º depending upon the outside temperatures and product being baked. If assisting Decorators in the Cake Room, temperature is maintained at between 65º and 70º. Workers periodically walk into freezers at -10º, spiral freezer at -20º and the refrigerator at 35º. If loading pan washer, worker performs duties in an enclosed room that is both warm and humid. If working in the Packaging Room, temperature is maintained from 50º - 55º. If performing cleaning duties by the ovens, the workspace is warm and humid.
Moisture: Some contact with liquids if washing floor, toilets, sinks, utensils, and worktables.
Chemicals: OSHA approved soaps, degreasers, sanitizers and cleaners.
Noise / Vibration: Moderate noise level in production bakery due to stacking of pans, operation of ovens and conveyor lines. Ear production is worn if working in the pan washing room due to noise level of the pan washer.
Odors: Odors are generally pleasant from bakery products.
Hazards: Burns from hot ovens, burns from 180º water hose, slip/falls on wet or greasy flooring, falls from ladder work, and potential for hitting head when working under stationary equipment.

Under general supervision, the job of the Food & Nutrition Services Cook/Baker is to prepare and cook items following prescribed menu, while maintaining proper food safety and Hazard Analysis Critical Control Points (HACCP) protocols and record keeping. The Cook/Baker has good knowledge of methods of large-scale cooking and baking, including the use and care of kitchen equipment and utensils, and cleaning materials and sanitation procedures with specific responsibilities for preparing food, cooking and distributing food and supplies; preparing food for transport; maintains kitchen in a safe and sanitary condition and guiding assigned personnel in the performance of their job functions. The Cook/Baker must plan work efficiently for the economic use of food and supplies and equipment, follow written and oral instructions, and use basic math to adjust and execute recipes.

Prepares and cooks/bakes large-scale meals for the purpose of serving food to students and adults. E
Prepares foods using approved methods of preparation and quantity recipes for the purpose of maximizing efficiency, standardizing product, and complying with nutritional requirements.
Adjusts recipes, using basic math skills for the purpose of optimal scheduled meal distribution. E
Estimates quantity of food needed to meet menu requirements for the purpose of ensuring sufficient supply, maximizing product usage and minimizing food waste. E
Ensures food preparation and serving areas meet acceptable cleanliness and sanitary standards for the purpose of meeting health requirements. E
Supports assigned personnel for the purpose of assisting them in food preparation and serving functions in a safe and efficient manner
Cleans kitchen, utensils, dishes, equipment, storage, food preparation, dining areas and serving areas for the purpose of maintaining required sanitary conditions. E

Assists in the storage and care of foods, supplies and equipment.

Work Environment/Physical Demands
The usual and customary methods of performing the job's functions require the following physical demands: significant lifting, carrying, pushing, and/or pulling; frequent use of step ladder and balancing; stooping, kneeling, crouching, and/or crawling; and fine finger dexterity. Generally the job requires 45% walking and 55% standing. The job is performed under some temperature extremes and under conditions with some exposure to risk of injury and/or illness.
