Essential Functions and Responsibilities: * Promptly greets guests, takes beverage orders from the restaurant servers or directly from guests. * Promptly prepares beverage orders for servers according to server tickets. * Mixes alcoholic and non-alcoholic drinks, cocktails and other beverages as requested and in compliance with company standards and recipes. * Checks identification of guests to verify age requirements for purchase of alcohol. Promptly notifies management of underage drinking guests who are obviously intoxicated. * Rings up all drink and food orders in the POS system, collects payment for drinks and/or food served, balances all receipts and follows proper cash handling procedures. * Ensures the bar area is fully equipped with tools and products needed for mixing beverages and serving guests. Promptly reports any defective product or equipment. * Offers and serves food items to guests seated at the bar when appropriate or as requested. * Demonstrates a thorough knowledge of food and beverage products, menus, and promotions. * Responsible for routine cleaning, set up and breakdown of bar. This includes all preparation required to run the bar efficiently and smoothly. * Washes and sterilizes glassware and keeps bottles, glassware and beverage products arranged to make an attractive display. * Completes daily/weekly cleaning and side work requirements. * Participates in scheduled catering events as required. * Performs other duties as assigned by a supervisor. Job Requirements: * 1-2 years' experience in bartending preferred. * Previous experience with Japanese cuisine, particularly sushi and sake preferred. * Basic understanding of wine, spirits and sake preferred. * Must be certified in Responsible Alcohol Service by applicable agency. * Must be 21 years of age or older. (based on state law) * High School diploma or GED preferred.

Reports any kitchen equipment or maintenance issues to the chief chef or manager on duty (MOD). * Is knowledgeable about and complies with the Company's standards on food portioning, cooking methods, quality standards, recipes, storyboards, service cycle, policies and procedures. * Prepares foods in accordance with the Company's portions standards and recipe specifications prior to cooking, including battering, breading, seasoning and/or marinating foods. * Adheres to the Company's guidelines on proper food presentation and garnishes for all dishes. * Handles, stores, labels, and rotates foods properly and in accordance with public health safety, state and local laws. Understands and follows FIFO method for food handling. * Uses knives, hand tools, utensils, and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill, freeze or otherwise produce food for the dining room. * Adheres to Company guidelines on alcoholic beverage service. * Presents a clean and neat appearance and uses a courteous manner with all guests. * Immediately notifies MOD when guests are not satisfied with their experience or if an accident occurs. * Participates and joins restaurant staff in ensuring guest special occasion celebrations are memorable.
