This position functions under strict Federal, State and local regulations, which must be learned and practiced. Job duties: Prepare breakfast, lunch, or supper items using standardized recipes, production sheets and production counts. Performs all assembly positions for cooks on tray line. Washes all pots, pans and cooking utensils at the end of each shift and as needed during the shift. Assemble resident meals, efficiently and accurately, within a given time period. Mops and cleans all kitchen flooring twice daily and especially grout to keep grime free. Takes out all trash at least twice daily and breaks boxes for recycling program as needed. Receives; checks to see that the item and number ordered are received. Monitors the temperature of food upon delivery and puts away all refrigerated and frozen food stock within 45 minutes of arrival.
