Essential Functions/Duties: * Sort and rinse dirty dishes, glassware, tableware, and cooking utensils, then place them in racks for the dish machine. * Sort and stack clean dishes; carry them to the cook's line and proper storage areas. * Rewash any soiled dishes before delivery. * Change dishwater in the dish machine regularly. * Wash pots, pans, and trays by hand as needed. * Remove trash and garbage and take it to the dumpster. * Set up and break down the dishwashing area. * Clean, roll, and unroll mats in the kitchen. * Fill and empty soak tubs with cleaning and sanitizing solutions. * Sweep and mop kitchen floors. * Wipe up spills promptly to keep floors dry and safe. * Conduct general restaurant cleaning tasks as directed. * Notify the manager immediately if dish machine wash or rinse temperatures fall below safety standards. * Follow proper hand sanitation protocols at all times. * Assist culinary staff with food preparation only after completing all assigned cleaning duties, ensuring quality and timing are not compromised. * Participate in and complete all required ongoing training, including monthly online and in-person training, annual skills competencies education, and role-specific certifications, to ensure continued competence and adherence to organizational and regulatory standards. Principal Duties/Responsibilities: Empty and clean all kitchen garbage barrels Sweep floors, walk in freezer, refrigerator, and under all equipment Mop floors and clean out mop bucket Clean all kitchen equipment, tables, and counters in accordance with established Health Department regulations Clean all stovetop grates and hood filets Check and clean grease traps Report all safety incidents and accidents and all unsafe and unsanitary conditions immediately to supervisor Clean inside of dishwasher, doors, and drain Clean all sinks and disposals in the kitchen Clean dishwashing areas and pot sinks Clean food transportation carts Clean silverware, dishes, glasses, and all other kitchen and dining room accessories and equipment used in preparing meals being served to residents Store all silverware, plate, and utensils Take out trash, boxes, and pt liners back in trash barrels Wipe down and clean coffee, milk, juice, and ice-cream machines as well as all tables and counters Wash all service carts Deliver all soiled linen to laundry room Scrub and wash stovetops Mop elevators Perform other general kitchen duties as assigned Assist in putting orders away when requested Education/Experience/Licensure/Certification: High school diploma or equivalent.
