GENERAL PURPOSE OF THE JOB This job requires the Twin Peaks Janitor, Busser to clean and maintain the Twin Peaks restaurant. Each team member is defined by pride, extreme standards, and discipline when it comes to keeping his/her restaurant clean and sanitized.
THE UNIFORM
* Clean TP black hat facing forward at all times. Brim never bent.
* Hair must be kept clean. All hair must be kept underneath the TP hat.
* Clean shaven. Beards & mustaches are allowed, but must be maintained.
* Fingernails must be kept trimmed.
* Jewelry is not allowed to be worn in ears, face, around the neck or wrists.
* Head phones or ear buds are not to be worn.
* Clean non-faded/wrinkled TP kitchen shirt tucked in.
* Belt is required.
ESSENTIAL DUTIES AND RESPONSIBILITIES
The duties and responsibilities of a Twin Peaks Hear of House Line Cook include, but are not limited to:
* Adhering to uniform standards
* Adhering to policies and procedures that maintain a clean and sanitized restaurant
* Maintain clean and organized stations and equipment
* Ensure HOH Standards, Safety and Sanitation, and GHS requirements are followed at all times
* Ability to work as a team
* Train using tablets or computer
* Ability to work in a fast paced environment
* Any other duty/responsibility that management may deem necessary
EDUCATION and/or EXPERIENCE
Proven experience as a Janitor Busser.
LANGUAGE SKILLS
Ability to communicate in English. Must be able understand the policies and procedures used to clean and sanitize a restaurant.
REASONING ABILITY
Ability to apply common sense and understanding to carry out simple one or two-step instructions. Ability to deal with standardized situations with only occasional or no variables.
CERTIFICATES, LICENSES, REGISTRATIONS
Must attend orientation and agree to policies and procedures as outlined in the Twin Peaks training. Must attend and successfully complete the training program prior to working a shift without supervision. Must successfully attend and complete any and all other required training in compliance with local and state regulations, such as food and/or alcohol service certifications.

Main Duties
Detail all tables before service begins, ensure place settings are neat and organized and candles are on the tables
Ensure appropriate table setting and china is used for various services throughout the day; breakfast, lunch, dinner or feast service; mis en place (ketchup, salt pepper, HP and sugar bowl).
Stock all stations upon arrival (small plates, sharing plates, water and wines glasses, and all the silverware) and maintain throughout service along with working with your team to keep the bread warmer full and neat
Maintain section and ensure bread and water is delivery upon guests' arrival while also assisting other sections when applicable
Clear tables plates, silver / glassware between each course and subsequently wipe down and re-set table for new guests
Polish silverware and pot wash are stored according to local standards
Complete side work before and after service (see side work sheets for details)

SUMMARY:
Barbacks are primarily responsible for the seamless execution of bar operations, preparing batches, garnishes,and beverages per standard operating guidelines set forth in the bar manual. Uses appropriate garnishes, barware, glassware, and recipes for all beverages. Oversees bar maintenance, always maintains a clean and organized bar. Keeps bar area supplied in glassware, soda, garnishes, etc.
RESPONSIBILITIES:
Possess a complete understanding of all beverage recipes, garnishes, barware, and glassware. Have thorough knowledge of the wines-by-the-glass program, beer and non-alcoholic (N/A) beverage program, including par levels and appropriate glassware.
Understand and maintain dining service standards for guests dining at the bar. Ensure correct portion sizes, batching methods, and compliance with bar rules and procedures.
Conduct thorough bar inventory, accurately documenting all products, including juices, sodas, napkins, condiments, and dry goods. Assist in stocking liquor, beer, wine, and N/A beverages, and accurately complete inventory forms.
Help with bar orders and requisitions, ensuring timely communication of any 86'd items to managers.
Monitor alcohol consumption to prevent guest intoxication. Anticipate guest needs and provide prompt, courteous service always.
Maintain knowledge of equipment use and maintenance, ensuring proper handling, storage, and rotation of all products. Promptly report any equipment or food quality issues to management.
