Position Purpose:
Portion cut, slice and package meats/seafood to specific sizes and weights according to work order specifications and customer preferences, clean and sanitize tools ensuring all safety, Good Manufacturing Practices (GMP) and quality standards are met and to maintain the efficient flow of product through the production process. Functions as a team member within the department and
organization, as required, and perform any duty assigned to best serve the company.
Responsibilities may include, but not limited to:
Review work schedule, perform safety check on equipment, obtain supplies required to perform the work and prepare for operations. At the end of the shift secure all equipment and complete all necessary paperwork.
Check cutting list and obtain stock from coolers, open cases and place trash in proper receptacle.
Cut various size portions of raw meat/seafood (Beef / Pork / Lamb / Seafood) by hand with knives using proper cutting techniques.
Clean and sanitize knives and tools, maintain and abide by USDA regulations and standards as required.
Cut portions of meat/seafood using band saw or slicer, check weights and place cut meat portions into proper tubs.
Remove totes and tubs of scrap and place in pick-up area.
Assist Packers and Sanitizers as required.
Perform general housekeeping duties, clean packaging work area and equipment, maintain and abide safety and quality regulations and standards as required.
Performs other related duties as assigned.
Qualifications:
• High school diploma or GED.
• 1+ years meat cutting experience or on the job experience.
• Knowledge of portion control practices and be familiar with the various cuts and types of meat products.
• Ability to stand continuously for 8 - 10 hours; ability to perform frequent lifting of 10 - 60 pounds, 60+ pounds occasionally from all positions; ability to occasionally push/pull tubs of meat weighing in excess of 100 pounds.
• Requires very repetitive work of the upper extremities with frequent twisting and bending at the waist along with extended reaching at knee level, waist level and shoulder level. Manual dexterity is required to assemble boxes, operate machines, handle meats, etc.
• Must be able to work in a damp, cool environment (40-45 degree) with some exposure to freezer temperatures and work a flexible schedule, depending on work volume.
• This position must pass a post offer drug test and background check.

The Meat Cutter's performance and the ability to cut for quality and quantity of product have a significant impact on the guest's dining experience. Top quality meat cutting ensures that the restaurant uses its product to optimize profit and that the Golden Corral guest receives full value in both product and service.
Food Production:
Cuts meat according to product specifications and time standards.
Complete use and following of the buffet production system to insure quality and shelf life compliance.
Rotates cut and boxed meat to ensure freshness.
Stocks and arranges the Meat Cooler in accordance with approved food safety guidelines.
Cleanliness:
To eliminate cross-contamination, sanitizes all surfaces between production of chicken and any other meat.
Recognizes that meat is bad when it is sticky, slick or smells bad.
Cleans and sanitizes the meat room according to cleanliness, service, and quality standards.
Follows local health department laws.
Operational Excellence:
Uses administration forms to maintain an inventory of all meat products and to determine the production level.
Notifies the Manager of any discrepancies in product or equipment.
Performs opening and closing administrative procedures.
Properly maintains equipment according to the Equipment Maintenance manual.
Performs duty roster tasks.

Contributes to overall cleanliness of the department by performing daily department sanitation, picking up, organizing, and cleaning work areas, shelving, and sales floor as needed.
Required to maintain food safety and grind logs.
Complete periodic cutting yield tests with meat manager and assistant manager.
Verify meat deliveries for accuracy.
Inspect displayed products for close or expired dates and remove when necessary. Maintain markdown policy.
Other duties as assigned.
Regular, timely attendance in compliance with the work schedule, and adequate notice to find a replacement for occasional absences
Guest Service
Provides customer service to guests including assisting Guests at the service counter
Assists guests with finding items they are looking for, answers questions regarding types, cuts, and suggested preparation of meats.
Takes special orders and other special requests and completes them in a timely manner.
Answers the telephone and assists callers using proper phone etiquette.

WI Certified Food Manager License (Hometown Grocers to reimburse if associate obtains while employed)

Requires proper training and knowledge of certain equipment and procedures needed to complete the job
Ability to interpret and follow instructions and solve problems
Understanding of, or ability to quickly learn applicable local, state, and federal regulations, food handling and sanitation requirements
Qualified applicants must be over the age of 18
Must have minimum of 12 months previous experience cutting meat including using knives and power equipment, such as slicers, grinders, cubing machine and power saw preferred

PHYSICAL DEMANDS
Stand in one place for a long period of time, bend, stoop, and kneel regularly
Lifting 50 to 80 pounds on an occasional basis
Repetitive arm and hand movements, eye-hand coordination, substantial hand strength, and standing in place for long periods of time
May be exposed to extreme temperatures. Market Area Meat Cutter/Trainer perform their duties primarily in the cutting room, where the temperature ranges from 40 to 50 degrees Fahrenheit at all times

WORK SCHEDULE
The Meat Cutter- Floater is an hourly position that is a full-time work schedule
The work schedule will greatly include mornings, afternoons, weekends, and holidays, with the flexibility to work evenings or overnight as needed
