This position is located in the Kitchen/Food Service Department of the Veterans Home of California - Redding. The Cook Specialist I assists with the preparation, cooking, and dispensing of food; works with food service staff and Member Helpers; and performs other related work as assigned.

Plan, organize, and assist with preparing, cooking, and serving food to Corpsmembers
Implement a menu of nutritionally balanced meals, including vegetarian and ethnic dishes
Follow standard food safety practices, including Serve Safe principles and Hazard Analysis Critical Control Points (HACCP)

Working Conditions
Duties will be performed at the brand new CCC Mendocino Center 600 E. Hill Rd. Willits, CA 95490.
Desk space and computer access is afforded within the Kitchen Office. The Cook Specialist may be called upon to make trips to local stores and food vendors. The trips are usually within the County but may sometimes require planned trips out of the area.

Effective July 1, 2025, in accordance with the applicable Memorandum of Understanding, the Personal Leave Program 2025 (PLP 2025) was implemented. PLP 2025 requires each full-time employee in Bargaining Unit 15 and related Excluded, Exempt and Statutory Exempt employees, will have their base salary reduced by 3 percent and will receive 5 PLP 2025 leave credits monthly through June 2027. Salaries do not reflect the recent changes. Part-time employees are subject to the same conditions as full-time employees, on a prorated basis equivalent to their time-base. Permanent intermittent employees are subject to the same condition as full-time employees, based on the number of hours worked in the pay period.
This is a limited term position which may be extended or become permanent.

Ensures staff and the incarcerated workers follow all departmental and institutional policies and procedures including, Title 15, Department Operations Manual, California Code of Regulations Title 22, Standard Operational Procedures, Diet Manual, California Retail Food Code, and Food & Nutrition Services Manual. The Correctional Supervising Cook, CF supervises the cleaning and sanitation of the kitchen facility and equipment. Maintains order and supervises the conduct of the incarcerated and protects and maintains the safety of persons and property.

PLP 2025 requires each full-time employee in Bargaining Unit 1, 2, 3, 4, 5, 6, 7, 9, 11, 12, 13, 14, 15, 17, 18, 19, 20, and 21, and related Excluded, Exempt and Statutory Exempt employees, will have their base salary reduced by 3 percent and will receive 5 PLP 2025 leave credits monthly through June 2027. Salaries do not reflect the recent changes. Part-time employees are subject to the same conditions as full-time employees, on a prorated basis equivalent to their time-base. Permanent intermittent employees are subject to the same condition as full-time employees, based on the number of hours worked in the pay period.
Under the direction of the Food Administrator I/II, Correctional Facility (CF) or the supervision of the Supervising Correctional Cook, DOC, the Correctional Supervising Cook, CF, supervises and trains staff and the incarcerated workers responsible for preparing meals for patients in a correctional health care facility and oversees the preparation and dispensing of therapeutic diets per physician orders. Ensures staff and the incarcerated workers follow all departmental and institutional policies and procedures including, Title 15, Department Operations Manual, California Code of Regulations Title 22, Standard Operational Procedures, Diet Manual, California Retail Food Code, and Food & Nutrition Services Manual. The Correctional Supervising Cook, CF supervises the cleaning and sanitation of the kitchen facility and equipment. Maintains order and supervises the conduct of the incarcerated and protects and maintains the safety of persons and property.
Minimum Qualifications
Either I
Experience: One year of experience in the California state service performing the duties of a Cook Specialist II (Correctional Facility) or a Cook Specialist II.
Or II
Experience: Two years of experience in a supervisory capacity over cooks and other food service workers with responsibility for supervising and assisting with the preparation, cooking, and serving of various food items. and

Under supervison, the incumbent works as part of the cooking team to prepare meals that are appetizing, appealing and safe to eat. Effective July 1, 2025, in accordance with the applicable Memorandum of Understanding, the Personal Leave Program 2025 (PLP 2025) was implemented. PLP 2025 requires each full-time employee in Bargaining Unit 15, and related Excluded, Exempt and Statutory Exempt employees, will have their base salary reduced by 3 percent and will receive 5 hours PLP 2025 leave credits monthly through June 2027. Salaries do not reflect the recent changes. Part-time employees are subject to the same conditions as full-time employees, on a prorated basis equivalent to their time-base. Permanent intermittent employees are subject to the same condition as full-time employees, based on the number of hours worked in the pay period.
Under the direction of the Food Administrator I/II, Correctional Facility (CF) or the supervision of the Supervising Correctional Cook, DOC, the Correctional Supervising Cook, CF, supervises and trains staff and the incarcerated workers responsible for preparing meals for patients in a correctional health care facility and oversees the preparation and dispensing of therapeutic diets per physician orders. Ensures staff and the incarcerated workers follow all departmental and institutional policies and procedures including, Title 15, Department Operations Manual, California Code of Regulations Title 22, Standard Operational Procedures, Diet Manual, California Retail Food Code, and Food & Nutrition Services Manual. The Correctional Supervising Cook, CF supervises the cleaning and sanitation of the kitchen facility and equipment. Maintains order and supervises the conduct of the incarcerated and protects and maintains the safety of persons and property.

Effective July 1, 2025, in accordance with the applicable Memorandum of Understanding, the Personal Leave Program 2025 (PLP 2025) was implemented. PLP 2025 requires each full-time employee in Bargaining Unit U15, and related Excluded, Exempt and Statutory Exempt employees, will have their base salary reduced by 3 percent and will receive 5 hours PLP 2025 leave credits monthly through June 2027. Salaries do not reflect the recent changes. Part-time employees are subject to the same conditions as full-time employees, on a prorated basis equivalent to their time-base. Permanent intermittent employees are subject to the same condition as full-time employees, based on the number of hours worked in the pay period.
Under the direction of the Food Administrator I/II, Correctional Facility (CF) or the supervision of the Supervising Correctional Cook, DOC, the Correctional Supervising Cook, CF, supervises and trains staff and inmate-workers responsible for preparing meals for patients in a correctional health care facility and oversees the preparation and dispensing of therapeutic diets per physician orders. Ensures staff and inmate-workers follow all departmental and institutional policies and procedures including, Title 15, Department Operations Manual, California Code of Regulations Title 22, Standard Operational Procedures, Diet Manual, California Retail Food Code, and Food & Nutrition Services Manual. The Correctional Supervising Cook, CF supervises the cleaning and sanitation of the kitchen facility and equipment. Maintains order and supervises the conduct of inmates and protects and maintains the safety of persons and property
Minimum Qualifications
Either I
Experience: One year of experience in the California state service performing the duties of a Cook Specialist II (Correctional Facility) or a Cook Specialist II.
Or II
Experience: Two years of experience in a supervisory capacity over cooks and other food service workers with responsibility for supervising and assisting with the preparation, cooking, and serving of various food items.
Education: Equivalent to completion of the twelfth grade.
