Miguel’s Restaurant was founded in 1973 by Mike and Mary Vasquez in Corona, California and named in honor of Mike’s grandfather, Miguel.
In 1975 they leased a fast-food restaurant located two miles from the current Miguel’s and named it Miguel’s Jr., which was an immediate success.
In Dallas in 1991, Bob McNutt, Ray Washburne, Dick Washburne and Tex-Mex veteran Michael “Mico” Rodriguez joined together to develop a new idea in traditional Mexican restaurants.
In 1997, Mike and Mary relocated the original Miguel’s Restaurant a few blocks over to its current location in the city of Corona.
The new restaurant opened on October 11, 2000.
After ten months of construction, Phil opened up his new restaurant under the name Los Arcos in 2001.
So, with the help of a local builder, La Cocina moved its operations into a new building in 2002.
Orange County got its first taste of a Corona legend in the summer of 2004 with the opening of Miguel’s in Foothill Ranch.
Litwin says she has doubled her 2006 sales in the first quarter of this year.
In September of 2008 the newest Miguel’s Restaurant opened lakeside at the Shops at Dos Lagos in Corona, California.
