Responsible for planning, set-up, preparation and execution of well-balanced and appealing employee meals in accordance with departmental quality standards and specifications. RESPONSIBILITIES AND JOB DUTIES:
Maintain and strictly abide by state sanitation/health regulations and hotel requirements.
Maintain complete knowledge of correct maintenance and use of equipment; use equipment and tools only as intended, properly and safely.
Maintain complete knowledge of and comply with all departmental/hotel policies and procedures.
Meet with Banquet Chef/Executive Chef to review assignments, anticipated business levels, changes and other information pertinent to the job performance.

Qualifications

The Food Service Head Cook is primarily responsible for achieving the following outcomes for the Head Start/Early Head Start program:
1. Education, Disabilities and School Readiness
Help education staff plan and participate in nutrition activities with the children.
2. Health and Safety
Prepare breakfast, lunch and afternoon snack for children, the supervising teachers and guests in the classrooms.
With the guidance of the Health Coordinator or Health Manager and consultants, provide for the nutritional needs of each child, including those with special dietary needs and children with disabilities as determined on special care plans.
Serve a variety of foods, giving consideration to cultural and ethnic preferences to broaden the children's food experiences.
Provide 1/3-2/3 of each child's daily nutritional needs through breakfast and lunch and afternoon snack as scheduled, served family style in the classrooms.
Assure the qualities and kinds of foods served conform to recommended serving sizes and meet or exceed minimum USDA standards for meal patterns.
3. Family Engagement and Support
Communicates with families to discuss food for special dietary needs when necessary.
Coordinates activities with families to comply with program celebration policy.
Participates in food and nutrition activities for families when possible.
4. Human Resources and Supervision
Recruits and trains substitute cooks.
Supervise the Corwin Center custodian and submit supply orders.
Trains and provides direct support to anyone assigned to help in the kitchen with meal service activities.
Coordinates schedules of all food service staff and arranges for substitutes as needed.
5. Communication and Service Coordination
Coordinate with teachers to assure meals and snacks are appropriately scheduled according to the CACFP grant, and when necessary, individual needs are met.
Coordinate with teachers to assure children who arrive late receive breakfast or lunch upon arrival.
Coordinates planning, purchasing and storing of food and non-food supplies for special events with education and family engagement staff.
6. Planning, Analysis and Documentation
Make suggestions for monthly menus and coordinate with Head Cook.
Attend and participate in the Health and Nutrition Committee meetings.
Update changes to approved menus daily if modifications are made. Submit final menu to the Director after the last class day of the month.
Complete inventory of food and non-food supplies before the beginning of each Head Start school year before start-up food and supplies are purchased. Submit to Director for USDA grant documentation.
Monitor and record food temperatures as required.
Mark Itemized receipts and submit to the administrative assistant the day received.
Help monitor food and non-food costs and adjust purchases based on available budget.
Keep documentation of CN (Child Nutrition) labels for commercially prepared foods.
Participate in annual self-assessment of program operations.
Prepare and deliver meals for the Early Head Start classroom during the summer months.
7. Operations and Facilities
Prepare, serve and store food in accordance with local and state food safety and sanitation rules.
Order food and non-food related supplies weekly, bi-weekly or an as needed.
Operates standard commercial kitchen equipment and utensils to prepare meals. Checks all equipment on a weekly basis and reports needed repairs to supervisor.
Assures that dishes are washed and sanitized after each meal. Cleans utensils and appliances after each meal.
Responsible for use of kitchen area and assures staff and other adults use the area appropriately for program activities only.
8. Program Governance
Prepare meal service information for Policy Council and the Board as requested.
9. Professionalism and Leadership
Maintain confidentiality of other staff, and children and families served.
Attend all full staff meetings, and center meetings as requested.
Attend workshops and training related to job roles when opportunities become available, including CACFP training and webinars
Seek information about current health and nutrition standards, programs and best practice.
Maintain Safe Serve Certification.
Lead for the good of the entire organization, understand the big picture and use it as a framework to make decisions.
Work cooperatively with others; exhibit positive attitude and promote team work.

Qualification

Should have experience as a cook in a hospital or long term care facility for not less than one year.

Mathematical Skills
Ability to apply concepts such as fractions, percentages, ratios and proportions to practical situations.
