Supervises inmates in the preparation and production of meals for inmates as well as staff; supervises cleaning of dishes, utensils, pots, cooking equipment, and all Food Services areas. May include working in the Bakery, in the Prep, Cook/Chill, or Dish Room areas on the floor. Responsible for maintaining accurate inventory of kitchen tools, keys, and chemicals. Ensures all food products are handled and stored properly, and monitors portions and inventory.
