Tray line personnel are responsible for the set-up of the patient and staff tray line following posted or individual menus. Dishwashers are responsible for the cleaning and sanitizing of patient and staff meal trays, utensils, dishes, pots, pans and equipment utilized in the preparation and service of food. Essential Functions Tray Line Function Review and check diet order list obtained from the nurse's station, making the necessary changes in diets and notifying the cook as to the changes made. Set up the tray line and check prior to meal service to assure that it is ready for efficient and complete service of trays. Check food to ensure proper temperature for service. Keep the tray line sanitary and neat throughout the break or mealtime service. Work the charging station/cash register in the tray line area of the cafeteria. Place food on trays according to menu and diet regulations. Handle food and equipment in accordance with the sanitary practices of the dietary department. Serve late or hold trays; deliver food carts to suites. Serve snacks or between meal nourishment as required by the patient and as stipulated in the diet order for that patient.
