POSITION ESSENTIAL FUNCTIONS:
Meal preparation and service
Prepares food for patient care units, catered hospital functions and retail sales in the Bistro.
Ensures that all foods are hygienically and correctly prepared/cooked and meet the dietary requirements and existing standards for quality, freshness, taste and appearance.
Operates a variety of kitchen equipment such as oven, induction range, slicer, blender, mixer, dish machine, disposal, and knives.
Food temperatures (cooking/serving) are appropriate and logged accordingly.
Standardized recipes followed and trays garnished appropriately.
Prepares for next day's production.
Hand washing procedures followed/plastic gloves used properly/hair restrained proper.
Nutritional care of patients
Review tray lists and menus and ensure that all meals and nourishments are prepared according to diet orders and ready at required times.
Meal service records maintained.
Menus dated and labeled correctly, with proper notations made as needed.
Set up patient trays with correct food items for prescribed diets.
Menu choices and portion control standards correctly followed; substitutions correctly documented.
Discuss the dietary needs of patients with health care team members as needed. Discuss food preferences with patients as needed. Provides home diet instruction materials for all patients on therapeutic diets.
Nourishment centers fully stocked and orderly and temperatures maintained and logged.
Cleaning and maintenance
Keep work area clean, sanitized and orderly at all times. Wash dishes, utensils, pots and pans in timely manner to ensure adequate supply for food production needs. Practice safe food handling throughout the food preparation and clean-up process.
Assures work is performed in accordance with federal, state and facility regulations regarding sanitation and infection control.
Assist with the maintenance of department equipment and supplies, including inspection of dishes, utensils, service and cooking wares. Alert supervisor to needs and problems concerning equipment and supplies.

Answers phones; assist staff and patients; respond to inquiries.
Access the Nutrition Care Manual as a diet resource and for patient education materials.
Print patient letters and education information, labels for Bistro, pt. menus, nutrition count info, etc.
Participate in educational programs and in-service training, and attend department meetings as required.

ESSENTIAL FUNCTIONS:
1. Prepare food based on what is indicated on the daily menu utilizing health and sanitation procedures including washing hands, using gloves, and sanitizing food preparation areas properly.
2. Deliver food for each classroom in correct proportions and from central kitchen to site(s).
3. Provide food, dishes, utensils, and other supplies to each classroom in time for meal service. Clean and sanitize dishes and utensils after every use.
4. Create warm and welcoming relationships with children and families.
5. Review transportation sheets and other required paperwork, to be sure that they match what is indicated on the daily menu. Log changes when necessary.
6. Communicate efficiently and in a timely manager with supervisors if/when issues arise.
7. Fill out Meal Incident Reports to communicate issues related to food quality and quantity.
8. Reheat food safely, if/when it falls out of proper temperature.
9. Ensure accurate documentation of refrigerator and freezer temperature logs twice daily.
10. Clean and sanitize thermometers before and after every use.
11. Clean and maintain refrigerator and kitchen areas, recycling as appropriate.
12. Attend staff meetings and required professional development opportunities.
13. Perform duties under the direct supervision of the Head Cook and indirect supervision of the Assistant Cook.
14. Perform other duties as assigned, including supporting general classroom supervision needs, as appropriate, and per availability.

High School Diploma or equivalent
Upon hire, unless already achieved, must enroll in at least 3 units of Early Childhood Education from an accredited college or university per semester, until 12 units are successfully completed with a grade of C or better

Assist in collecting nutritional data for initial and periodic assessments, including dietary preferences, allergies, and feeding needs.
Support implementation of care plans by preparing charts, tracking nutrition-related goals, and assisting with progress monitoring.
Assist in the preparation and distribution of therapeutic and modified diets consistent with each participant's care plan and dietary orders.
Monitor food safety practices and sanitation procedures.
Maintain participant nutrition documentation, meal counts, and records as required for program compliance and audits.
Provide nutrition-related group education under the direction of the dietitian, consistent with the participant's functional level.
Report significant changes in food intake, weight, or physical status to the Registered Dietitian and interdisciplinary team.
Collaborate with kitchen staff and the food service vendor to ensure proper meal delivery, portion control, and therapeutic diet accuracy.
Assist in maintaining menus and verifying adherence to dietary guidelines, cultural considerations, and regulatory requirements.
Participate in interdisciplinary team (IDT) case conferences when needed to support nutrition-related goals and service delivery.
Qualifications
Minimum Education and Experience:
High school diploma or equivalent required.
At least two years of experience in a healthcare or nutrition setting (e.g., ADHC, skilled nursing, food service in elder care).
Coursework in nutrition, food science, or health preferred.
Licenses/Certificates:
Valid California Food Handler Card or ServSafe Certification (per Cal. Health & Safety Code §113947).
CPR and First Aid certification (preferred, may be required by employer).
Skills and Competencies
Basic understanding of therapeutic and modified diets (e.g., diabetic, low sodium, mechanical soft, puree).
Familiarity with Title 22 ADHC regulations, especially Section 54333 related to nutrition services.
Ability to communicate clearly with elderly or disabled adults, caregivers, and interdisciplinary staff.
Organizational skills to maintain accurate documentation and meet program deadlines.
Cultural sensitivity and respect for individual dietary needs/preferences.
Ability to lift up to 25lbs and stand or walk for extended periods.
Regulatory Reference
This position functions under the guidance of Title 22, Division 5, Chapter 3.5 - Adult Day Health Care, with duties supporting the role of the Registered Dietitian per §54333 (Nutrition Services). Nutrition Assistants may perform clerical and supportive duties but do not independently assess or prescribe dietary interventions.
Working Conditions
Work is performed in a structured ADHC facility environment.
May require standing for long periods, handling food trays, or assisting with kitchen duties.

COMPENSATION:
Range: $23 - $26/hourly
