Duties and Responsibilities * Mixing, chopping, dicing, grating, slicing, assembling food in preparation for cooking, baking, or assembling, grilling, baking, steaming, or frying foods. * Prepare meats for cooking: * Skinning, boning, trimming, stuffing, etc., as well as cooking the final product. * Prepares menu items for student meals in Gordinier and Lyle Dining Halls and catering functions in-house and off-campus. * Maintain records for the Service Summary Reports. * Cleaning and sanitation of utensils, equipment, and facilities. * May function as lead worker by coordinating, participating in and reviewing routine food production tasks performed by food service workers or student workers. * Can train food service workers or student workers in routine food production tasks. * Prepare requisitions for cooking ingredients and supplies * Maintain recipe files. * Check attendance for staff in the area. * All other duties as assigned.     Assists the Head Cook by helping direct and oversee the activities of building Food and Nutrition Services staff in the daily operation of the School Nutrition Programs. Works with the Head Cook to complete preparation of main and alternate line(s) menu items for the customer service line, satellite and special events, as needed. Completes the baking function as assigned by the Head Cook. Assists with the maintenance of the food service facility and equipment in order to comply with federal, state, local and departmental requirements. Completes assigned Daily Food Production, Food Temperature and other pertinent records. Communicates promptly and works harmoniously with the Head Cook, FNS Staff, Students and District Staff. Functions as Head Cook in the absence of the Head Cook. * Assists the Head Cook to direct, oversee and participate in the daily completion of building food service activities. Gives direction to fellow FNS Staff as needed. Assists in training and orienting new FNS personnel and substitutes in the Food Service Assistant and Pots and Pans/Dishwasher positions. Requisitions food and supplies and/or assists in receiving, stocking and storing food and supplies according to established procedures. Assumes responsibility for the building's food service operation and employees in the absence of the Head Cook. * Assists the Head Cook in the preparation of the main and alternate line(s) food items according to the planned menu and following established procedures. May be responsible for assembling food items for satellite meals to outlying sites and for special events. * Prepares baked goods such as breads, rolls, cookies and desserts; planning and adjusting standardized recipes as needed to ensure adequate amounts of food are available for all school meals, satellites and special events. * Serves food items that are appealing and appetizing in appearance, are in the correct portion size and are monitored for proper serving temperatures for the customer service line. Greets and serves customers in a prompt and courteous manner. * Performs assigned cleaning and sanitizing duties to assure sanitation and safety standards are met. Washes hands frequently according to sanitary guidelines. Assists with end of the school year cleaning, as instructed or assigned. * Maintains accurate and timely completion of records, as assigned, according to program requirements and department procedures i.e. daily food production records, meal counts, temperature documentation (both food and equipment) and other pertinent records. Monitors temperatures of hot and cold equipment, as assigned. * Participates in department, district and educational meetings as requested or as needed. * Works to meet goals of the department and district with a spirit of cooperation. * Performs other related duties within the scope of the Second Cook, Food Service Assistant, Pots and Pans/Dishwasher, Lunchroom Supervisor and Lunchroom Cashier positions as assigned or requested to contribute to the efficient operation of the Food and Nutrition Services Department and Willmar Public Schools.
