Job Summary:
The Food & Beverage Cost Control Analyst is responsible for monitoring and maintaining the food and beverage cost, utilizing the Eatec Inventory System and maintaining Info Genesis Point of Sales System for all outlets resort wide. PBC will provide training for the Eatec and Info Genesis systems.
Essential Duties & Responsibilities:
- Maintain the recipes to include inputting ingredients into Eatec and checking the accuracy of them for all restaurants to include banquets, Pebble Beach Market and The Beach Club.
- Perform random checks after inventory at the end of the month for correctness of various items on inventory sheet in all outlets.
- Validation of all recipes throughout the year by physically verifying each recipe using the printed Eatec version and then weighing each ingredient one at a time to verify them.
- Participate in Quals for all outlets, this includes having a scale to weigh the food being Qual’d and computer to adjust and correct all food items found to be wrong when needed.
- Add pertinent data in outlet abstracts. For all outlets through current point of sales system on a quarterly basis and produce reports for Quals.
- Input daily production after picking up from all outlets; enter productions into Eatec in a timely manner.
- Assist with data input of system on a daily basis. This includes input of recipes, products and input of Info Genesis.
- Assist Chefs and managers with every day questions reference the Inventory system.
- Assist Chef’s and Butchers to figure out proper yields for meat, fish, poultry and baked goods. Monitor these yields on a weekly basis.
- Monitor and input waste from previous night into Eatec on a daily basis.
- Ensure that all food and beverage product is entered into Eatec system correctly.
- Check with Chef’s (cooks) each morning to see if they have any new changes to their menus. Changes in (new products or change in amounts) input changes accurately and quickly.
- Any reasonable request by management.
- Monitor Intranet (F&B Menu change System) for request for changes in menus by restaurant managers and change IG touch screen or change Eatec recipe.
- Input Specials daily (Lunch, Dinner) into Eatec and then input into IG touch screens.
- Perform recipe verification check for one recipe item in each outlet on a weekly basis.
- Keep all production sheets up to date in Eatec and Outlets.
- Check Menu’s in outlets weekly to see if anything new items have been added.
- Comply with Pebble Beach Company safety and health policies and procedures.
- Support the Values and Standards of Pebble Beach Company.
Required Skills:
- High school diploma.
- Valid California driver’s license with 2 points of less.
- Must be able to train Info Genesis and Eatec to Chefs and Outlet Managers.
- Data input into Eatec and Info Genesis (PBC will train candidate).
- Requires excellent customer service skills.
- Basic knowledge of weights and measures and cooking techniques.
