Job Goal:
To deliver food to serving sites and safely serve food following food service standards and according to schedules, and comply with United States Department of Agriculture, New Mexico Public Education Department, Southwest Training Systems, and New Mexico Environment Department regulations.
Essential Duties and Responsibilities:
* Prepares for breakfast and lunch services at sites.
* Delivers food to the site.
* Loads and unloads truck.
* Cleans up and returns materials and undistributed foods.
* Cleans truck.
* Maintains records of deliveries.
* Supervises student workers.
* Communicates with staff regarding deliveries and schedules.
* Performs one or several food service operations including overseeing cafeteria serving, general kitchen help, cafeteria serving, assisting in food preparation, or other related duties.
* Maintains personal hygiene and hygienic serving conditions in accordance with New Mexico environmental code.
* Operates a variety of food preparation and service equipment.
* Posts menus.
* Sets up & breaks down steam tables, serving lines for breakfast and lunch.
* Performs daily cleaning of all kitchen equipment to ensure cleanliness and sanitary conditions are met.
* Maintains order and safety in the kitchen and cafeteria.
* Washes dishes and trays, cleans, sweeps, and mops food service areas.
* Completes and maintains records such as temperature logs, student meal counts, and satellite delivery sheets.
* Oversees students assisting with food service.
* Do daily laundry.
* May operate food delivery vehicles during summer lunch program; will need to pick up and load the truck for deliveries.
* Performs related duties as required.

As Food Service Worker, WG-7408, your typical work assignments may include, but not limited to:
* Set trays in tray assembly line. Sets-up cups, utensils, condiments, and hot and cold beverages on trays according to standard practice. Loads and pushes tray cart to designated area.
* Follows established procedures and standards on in assisting the cook in cooking meals according to the menu and portion sizes.
* Practices good health responsibilities in the kitchen by using proper Personal Protective Equipment (PPE) and sanitation practices.
* Maintains dish machine, sets-up, operates, breaks-down and cleans dish machine, pot washers, tray conveyors, refrigerators, freezers or other comparable equipment or appliances.
* Follows standard practices to rotate inventory promoting first-in/first-out issue. Moves covered and stored food for easy access. stores food according to standard practice.
* Cleans work tables, facilities or bathrooms as scheduled or when assigned. As scheduled or assigned, cleans toilets, sinks, mirrors, floors, etc. adheres appropriate sanitation standards.

The applicant must have sufficient training and experience to be trusted to perform duties on their initiative under general supervision .While no specific amount of experience is required, you must show that you possess the knowledge, skills and abilities to perform the duties of the position.
Physical Effort: May be required to perform heavy work, such as scouring and scrubbing large size cooking utensils and pushing heavy carts and trucks in unloading, storing, and delivering supplies. May be required to work on ladders and use powered cleaning equipment. Frequently lifts or moves objects weighing up to 40 pounds. Will be standing for prolong hours.
Working Conditions: The work is performed in the detention center under high stressful situations. The work is performed in kitchen areas where the steam and heat from cooking and dishwashing equipment often cause uncomfortably high temperatures and humidity. The work area is well lighted but usually noisy from food service activities, and there is danger of slipping on floors where food or beverages have been dropped, Regular1y exposed to hot liquids, sharp cutting blades, hot working surfaces, and extreme temperature changes when entering walk-in refrigeration or freezing units.

Full-time Description
The Pantry / Prep Cook assists in the preparation of meals, primarily on the cold side of the kitchen, by chopping vegetables, making salads, putting together entrees, and related duties. Additional responsibilities include cleaning food, stocking inventory, cleaning equipment & facility, washing dishes, and keeping a sanitary work area.
ESSENTIAL JOB FUNCTIONS / RESPONSIBILITIES:
Prepare cooking ingredients by washing and chopping vegetables, cutting meat etc.
Follow prep lists and instructions from Executive Chef and other kitchen management.
Measure ingredients and seasonings to be used in cooking.
Prepare simple dishes such as salads, desserts, etc.
Set up and stock stations with all necessary supplies.
Ensure all food and other items are stored properly; label and stock all ingredients so they are organized and easily accessible.
Maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, taking out trash, etc.
Comply with all food preparation and kitchen sanitation, food handling, and safety standards in accordance with applicable federal, state and local food handling and health regulations and established protocols.
Perform other kitchen / cleaning duties as needed to meet business demands.
Requirements
Previous experience as a Pantry / Prep Cook preferred.
High school diploma (or equivalent). Culinary certification preferred.
Valid New Mexico Food Handler certification required before hire.
Good knife skills
Accuracy and speed in executing assigned tasks.
Comfortable working with a team in a fast-paced kitchen environment.
Punctuality and reliability are critical.
Flexibility, adaptability and a willingness to pitch in where needed in the spirit of teamwork and is critical.
Ability to work evenings, weekends, weekdays, and holidays required.
Ability to work in an environment where the employee is frequently exposed to heat, steam, and noise.
Ability to stand for eight or more hours per day, sit, reach, lift, bend, kneel, stoop, climb stairs, push and pull items weighing up to 40 pounds.
The position requires manual dexterity; auditory and visual skills; and the ability to follow written and oral instructions and procedures.
