The Lubbock County Juvenile Justice Center Food Preparer shall prepare nutritious meals in accordance with daily menus in a timely manner. The Food Preparer shall maintain sanitary kitchen conditions, in accordance with local, state and federal guidelines.
* Follow daily menu plans and approved recipes. Request supervisory approval of any menu changes.
* Serve all meals in accordance with assigned meal times.
* Maintain daily record of all meals served. This includes but is not limited to meal production sheets for all meals served.
* Utilize appropriate equipment to prepare and serve each meal in a nutritious manner.
* Prepare nutritious snacks for the residents each evening.
* Check all incoming food products for proper packaging and damage before storing.
* Store opened packages of dry goods in plastic canisters that are labeled as to contents.
* Store all food products including but not limited to: fruit, potatoes, and onions, in appropriate bins or at least six inches off of the kitchen floor.
* Maintain temperature records on refrigerators and deep freezers to make sure food is properly cooled.
* Check weekly for spoilage, and notify supervisor of any products that need to be properly disposed.
* Report for work clean and in clean clothing. Maintain well-kept appearance for duration of shift.
* Wear hair shield during working hours. Assure that anyone working in kitchen wears hair shield as well.
* Nails and hands shall be washed thoroughly with anti-bacterial soap after using restroom, and prior to food handling.
* Wear sanitary gloves when serving food.
* Clean all supplies and equipment thoroughly after each use before being placed in storage.
* Sweep and mop entire work area at the end of each shift.
* Clean kitchen in accordance with checklist at the conclusion of each shift.
* Conduct thorough cleaning of all major equipment on a weekly basis.
* Dust all storage shelves and cabinets by removing stored food or supplies on a weekly basis.
* Dust all food containers.
* Maintain shift inventory and security of all knives and other objects in knife drawer. Keep knife drawer locked at all times. Notify Food Service Supervisor or Support Services Manager immediately of any missing knives, other potential weapons, or any violent, dangerous situation.
* Notify supervisor immediately of any missing, damaged or malfunctioning equipment.
* Ensure that the dining area is clean at the conclusion of each shift.
* Maintain security of doors in kitchen area; assure the doors are locked at the end of the shift.
* Assure that all equipment is turned off and stored properly at the end of each shift.
* Perform other duties as assigned.
To be eligible for appointment as a Food Preparer or part-time Food Preparer, a person must: 1) Meet NCIC/TCIC employment guidelines; 2) Be of good moral character; 3) Be able to read and write the English language to a level of proficiency that will allow the employee to prepare a meal from a menu, unassisted, and complete all other required reports; and 4) Have at least one year experience in institutional kitchen setting or one year of related schooling.
SPECIAL KNOWLEDGE, ABILITIES AND REQUIREMENTS
KNOWLEDGE OF:
Standards for Juvenile Detention Facilities and Juvenile Residential Facilities.
ABILITY TO:
Prepare meals for a flexible, daily student population, and 12 staff members three times daily, and evening snacks for students; and make informed decisions; and effectively communicate in writing and orally.

WORKING CONDITIONS AND HOURS:
Workspace is located in the secured area of the Lubbock County Juvenile Justice Center, which is a non-smoking building.
Workweek will be flexible hours within a forty (40) hour time period. The workweek begins on Saturday and concludes on the following Friday. Overtime will be compensated at the rate of time and one half or time for time, depending on the hours worked per week.

Properly input to-go and take-out orders as well as employee meals according to current procedures
Verify food prepared matches items ordered on POS. Ensure food orders reflect special requests, including menu substitutions.
Assist residents with menu selections as needed. Identify how various menu items are prepared, ingredients, and cooking methods especially for daily specials for residents and guests.
Ensure that plates are presentable before serving. Bring and serve food using large oval trays and tray stands; and preparing to-go or delivery orders appropriately.
Assure compliance with all proper serving techniques/etiquette (e.g., serving from left, clearing used dishes between courses, etc.)
Ensure proper set up of dining room tables and server stations with all utensils, chinaware, glassware, sugars, salt, pepper, creamers, and crackers, fill beverage machines and make coffee, juice, etc. as needed.
Bus tables and return all dishes to the kitchen. Clean tables and chairs after meals and sweep, vacuum and pick up floor areas, as needed. Flip tables by replacing linens, as needed.
Ensure the beverage station is clean and organized.
Maintain clean, sanitary, and clutter free work environment at all times.
Cooperate to get work done and is flexible with daily schedule.
Assist in food inventory when needed.
Wash dishes, pots, pans, and areas in the kitchen when needed.
Deliver meals to resident rooms as required.
2. General Duties
Respond to resident concerns and complaints in a professional and caring manner.
Demonstrate knowledge of each resident as an individual.
Understand and ensure compliance with all Federal (Title 22) and state regulations concerning the department.
Participate in daily huddle meetings to communicate key issues within the department.
Maintain a safe and secure environment for all staff, residents and guests, following established safety standards. Immediately report all hazardous conditions or equipment safety issues the Executive Chef.
Demonstrate knowledge of infection control, i.e., adequate hand-washing, blood borne pathogens procedures, universal precautions, etc.
Use Universal Precautions and follow established policies concerning exposure to blood/body fluids.
Report occupational exposure to blood, body fluids, infectious materials and hazardous chemicals in accordance with the property's policies and procedures governing accidents and incidents.
Communicates effectively and displays tact and friendliness when dealing with residents, families, visitors, co-workers, and supervisors.
Support a positive and professional environment in the Community by adhering to guidelines in the employee handbook including dress code, time off requests and employee breaks.
Attends scheduled in-services and trainings, be dependable and reliable according to attendance and punctuality standards.
Maintain all required certifications/licensures and training as required by state law and company policy.
Demonstrate flexibility in work schedule as evidenced by working holidays, evenings, weekends and additional shifts when necessary to ensure adequate coverage within the department.

3. Community Involvement

Position Summary
The Banquet Server is responsible for delivering exceptional food and beverage service for all high volume events in accordance with OVG Standards. This role requires the ability to interpret Banquet Event Orders, carry multiple entrees, and maintain organized, clean, and well-stocked service areas. Server provide professional, fine-dining level hospitality by anticipating guest needs and ensuring an outstanding experience. The position demands attention to detail, strong communication skills, and the ability to work independently or as part of a team in a fast-paced, customer-focused environment. Flexibility to work nights, weekends, and holidays is required.
This role pays an hourly rate of $4.00-$7.00 and is tip eligible.

Responsibilities
* Ability to read and understand Banquet Event Orders.
* Ability to carry at least 8 entrees per tray.
* Provide fine dining level food and beverage service to guests for all events consistent with DLTCC standards of service.
* Initiate and maintain friendly and professional contact with guests ensuring that all needs are anticipated and met.
* Setup and maintain both food and beverage stations in various locations throughout the building consistent with DLTCC standards of service.
* Maintain and inventory for both food and beverage stations.
* Maintain all event areas and front of house staging areas in a tidy and organized manner.
* Participate in both setup and cleanup of food and beverage service items.
* Ability to work independently during slower times
* Perform safe work by helping to provide a safe and clean work environment.
* Have a high level of social contact. Ability to work closely with staff and deal often with patrons.
* Ability to work a flexible schedule, including nights, weekends and select holidays.
* Must be detail oriented to ensure that work is accurate and complete.
