In 2002, Bill founded Freddy’s along with his brother, Randy, and friend and restauranteur, Scott Redler.
They responded to this in two ways: expanding to three company restaurants rather than the one they had planned on, and going full-throttle almost immediately on franchising; they were accepting franchisee applications just two years later in 2004.

The company, founded in Wichita, Kansas, in 2002, opened its first franchise in Hutchinson, Kansas, in December 2004. Its 150th location opened in April 2015 in Loveland, Colorado.
Co-founder and one of the sons of Freddy Simon, Bill Simon died at age 61 on December 17, 2016, after a battle with cancer.
Freddy's opened its 300th location in Indianapolis, Indiana, in March 2018.
In November 2018, the Bill Simon Memorial Scholarship Foundation was established to assist restaurant Team Members who plan to pursue post-secondary education in college and vocational programs.
