ESSENTIAL FUNCTIONS
Prepare and cook food items according to recipes, daily menus, and supervisor instructions.
Clean and inspect kitchen equipment, kitchen appliances, and work areas in order to ensure cleanliness and functional operation.

PHYSICAL AND MENTAL REQUIREMENTS
Moving about on foot to accomplish tasks, particularly frequent movements from place to place within the unit. Bend, lift, carry, reach/extend arms and hands above shoulder height frequently, or otherwise move in a constantly changing environment.
Lifting, carrying, and pushing up to 25 lbs. regularly, 30-35 lbs. frequently, and up to 50 lbs. occasionally.

Food Safety and Inventory

Accurately monitor, document, and manage product temperatures and holding times.
Assist with verifying and receiving deliveries, and ensure strict adherence to the First-In, First-Out (FIFO) inventory rotation system.

Qualifications
Minimum of 2 years of progressive hands-on experience as a Cook in a high-volume commercial kitchen environment.
Minimum of 1 year of experience in a leadership, supervisory, or training capacity within a kitchen setting.
Proven ability to read, follow, and teach others to follow standardized recipes accurately.
Must be able to successfully work a rotating shift schedule, which includes covering day shifts (breakfast/lunch) and evening/late-night shifts.

The Remote Breakfast Cook/Baker position assists with the preparation, production, and presentation of a variety of foods, completion of production sheets, direction/training of food service personnel, and with other associated food service activities as well as produces a wide variety of bakery goods. This position also provides a wide variety of cleaning services and other related duties required to keep remote camp and industrial facilities, food service areas, office facilities and similar areas in a clean and orderly condition. All duties are to be performed in accordance with NMS' mission, vision, and values as well as departmental policies, practices, and procedures.
This is a rotational position with a 3-week on & 3-week off work schedule, working twelve (12) hours per day, supporting the WNS Camp on the North Slope. The point of hire origin is Anchorage, AK.
Responsibilities
* Performs all main line food production duties with specific items determined by assigned shift.
* Prepares and produces a wide variety of bakery products in a remote camp setting.
* Completes pastry preparations including mixing, baking and frying as needed.
* Reviews the needs of the day with assigned supervisor(s), completes production sheets, reviews maintenance reports, and verifies supply needs and availability.
* Assists assigned supervisors with menu and recipe development.
* Monitors and replenishes all kitchen production items using proper rotation procedures.

Qualifications

* Candidates must have the ability to instruct and train others as well as the ability to handle multiple tasks occurring at the same time.
* Must have or obtain an Alaska Food Workers Card and/or ServSafe Certification upon hire.

Position Summary:

Responsibilities
Prepare and cook meals at Senior Center, in accordance with Department for the Aging (DFTA) and New York City Department of Health (DOH) guidelines.

Responsible for the safe handling of food, including cooking and storing meal according to temperature and safety guidelines at all times.
Receive, unpack, inventory, and store all food according to policy and guidelines immediately upon delivery. This includes dating perishable and canned goods.
Responsible for cleaning the kitchen and all kitchen equipment at Senior Center. This includes the periodic cleaning of large equipment such as refrigerators, freezers, slicing machine, range, ovens, range hood, steam table, and coffee urns.
Assist the Cook with cleaning the kitchen and dining room at Jefferson Senior Center.

Assign appropriate duties and supervise all volunteers in the Senior Center kitchen.
Assist the Head Cook at Senior Center in determining appropriate work schedules and tasks for volunteers.

Prepare food items in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.
Summary of Essential Job Functions
· Prepare food of consistent quality following recipe cards and production and portion standards, per check from servers.
· Start food items that are prepared ahead of time, making sure not to over-prepare estimated needs.
· Date all food containers and rotate as per PMHS standards, making sure that all perishables are kept at proper temperatures.
· Check pars for shift use, determine necessary preparation, freezer pull and line set-up. Note any out-of-stock items or possible shortages. Assist in keeping buffet stock, if applicable.
· Return all food items not used on the next shift to designated storage areas, being sure to cover and date all perishables.
· Assist in setting up plans and actions to correct any food cost problems, and control food waste, loss and usage per PMHS standards.
Operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven steam table, tilt kettle, waffle iron and flat top grill.
· Comply with attendance rules and be available to work on a regular basis.
· Perform any other job-related duties as assigned.
Abilities Required
· Self-starting personality with an even disposition. Maintain a professional appearance and manner at all times. Can communicate well with guests. Must be willing to “pitch-in” and help co-workers with their job duties and be a team player. Finger/hand dexterity in order to operate food machinery. Ability to grasp, lift and/or carry, or otherwise, move goods weighing a maximum of 100 lbs. on a continuous schedule.

ESSENTIAL FUNCTIONS
Prepare and cook food items according to recipes, daily menus, and supervisor instructions.
Clean and inspect kitchen equipment, kitchen appliances, and work areas in order to ensure cleanliness and functional operation.
Operate food station, including performing station checklist, temperature log, counter meeting, and signage.
Requisition food supplies, kitchen equipment, and appliances, based on estimates of future needs.
Monitor menus and spending in order to ensure that meals are prepared economically.
Maintain awareness of safety issues, and report them immediately to your manager.
SKILL AND KNOWLEDGE REQUIREMENTS INCLUDE
Partial High School education required; High School Diploma/G.E.D. preferred.
Culinary knowledge.
Food Safety certified and strong sanitation habits.
Strong customer service abilities; actively looks for ways to assist customers and coworkers.
Ability to recognize when a problem has occurred and communicate it to management.
PHYSICAL AND MENTAL REQUIREMENTS
Moving about on foot to accomplish tasks, particularly frequent movements from place to place within the unit. Bend, lift, carry, reach/extend arms and hands above shoulder height frequently, or otherwise move in a constantly changing environment.
Lifting, carrying, and pushing up to 25 lbs. regularly, 30-35 lbs. frequently, and up to 50 lbs. occasionally.
Ability to stand for the entire work day.
Climbing steps regularly.
Withstanding temperature extremes in freezer, refrigerator walk-in and grill areas.
Reading and writing work-related documents in English.
Speech recognition and clarity, including the ability to understand the speech of customers and co-workers and the ability to speak clearly so that you can be understood by customers and co-workers in English.
