Responsibilities Monitors sanitation and proper sanitation procedures. Inspects processing equipment to ensure it's completely sanitized prior to running production. Monitors specific processes assigned for each product, i.e., quality (grade), weight control, etc. Records test data applying statistical quality control procedures. Maintains and files test data records. Assists Production Dept. in meeting company specifications and government regulations. Notifies production supervisor and QC manager if samples are out of grade. Performs analysis for enzyme deactivation (Peroxidase/Catalyse). Checks and records blancher temperatures and retention time. Checks chlorine concentrations in waste line at chiller, sprayers, residual, etc. Checks and records net/drained weights. Checks scales to ensure calibration (accurate weight and balance). Inspects packaging, labels and coding to ensure compliance with customer specifications. Adheres to all company and facility policies, work rules, and procedures. Will don personal protective equipment (PPE) before commencing work. Follows all safety guidelines set forth by the Company.
