What Does A Kitchen Manager/Cook Do At The Salvation Army of The Syracuse Area

* Maintain a food service operation under the guidance of the site Director with the assistance of other kitchen staff
* Prepare meals from approved menus
* Work with kitchen staff to meet sanitation safety and nutritional standards as outlined by the State of New York.
* Coordinate kitchen staff for efficient running of kitchen
* Responsible to order food according to approved menus by County Nutritionist
* Keep daily records of food ordered, prepared and consumed.
* Take temperatures of foods served daily and summit to department of Senior Citizen Affairs monthly
* Kitchen manager is responsible for complete comprehensive monthly inventory.
* Monthly breakdown of total costs, inventory and cost per meal served.
* Summit monthly food cost inventory reports to Department of Senior Citizen Affairs
* Prepare vouchers for all kitchen expenses and submit to Bookkeeping Department

* Oversee food delivery and verify the delivery bill for contents of delivery.
* Store all food neatly upon delivery in the kitchen or storerooms
* Order all food from Food Bank Menu for feeding program to ensure that adequate food is available for the Soup Kitchen.
* Warm and prepare meals for feeding and by direction of the Family Services Worker.
* Maintain cleanliness and Sanitary conditions in the kitchen.
* Responsible to wash and store all items (pots, pans, utensils, and slicer) used to prepare the meals and to wipe down counters.
* Ensure that all food is handled and stored in accordance with requirements and regulations of the Health Department
* Maintain accurate records, which include the following: Daily Temperature Checks, In
* Kind Donations Forms and Daily menu changes.
* Must be willing to accept changes in working days depending on needs of the kitchen.
* Do necessary errands to procure food donations and sundries as needed.
* Responsible for décor and supplies for dining Room (i.e. Tablecloths, centerpieces, etc.).
* Supervise kitchen responsibilities and duties
* Provide a kitchen orientation to new staff.
* Complete a monthly inventory
* Ensure that the kitchen is deep cleaned every month.
* Ensure that the kitchen program is in compliance with Health Department and Child Nutrition program regulations.
* Supervise and organize volunteers for serving and assisting the feeding program
* Give names and addresses of all volunteers to the Office Manager for follow-up.
* Attend workshops, meetings, training as necessary to be informed of regulation shags.
* Participate in and support the implementation of special activities and events for the Corps as requested by the Corps Officer.
