EXAMPLE OF DUTIES: ESSENTIAL FUNCTIONS
Average Percent of Time
50% Cooks,prepares/produces all meals for restaurants suitable, for consumption according to standard recipes to ensure consistency of product to the guest. Visually inspects, selects and uses all food items of the highest quality in the preparation of all menu items.
15% Keeps an adequate supply of all prepared products on hand and ensures proper storage of all food products and portion control, eg., especially high-cost items
10% Keeps spoilage/waste to a minimum by utilizing proper quantities and rotating products.
10% Keeps all refrigeration, storage, and working areas in clean, working condition to comply with health department regulations
5% Organizes and transfers food items into lexans as needed, label and date for proper use and identification.
5% Turns on or off all kitchen equipment, such as stoves, ovens, grills, broilers, heat lamps, steamers, fryers, etc. and ensures all is in proper working condition.
SUPPORTIVE FUNCTIONS In addition to the performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the company.
Keeps floors dry and clean to avoid slip/fall accidents.
Performs general cleaning tasks using standard hotel cleaning product as assigned by supervisor to adhere to health standards.
Assists in assigning duties to prepcook and/or pantry cook
Reports any unsafe conditions to the manager and engineering department for service.
Sets up and maintains stock of daily food preparation.
Completes other duties as assigned by supervisor, such as moving supplies and equipment, etc.

The hospitality business functions seven (7) days a week, twenty-four hours a day. In addition, this is a hospitality business and a hospitable service atmosphere must be projected at all times. About You
LineCooks are responsible for preparation, assembly, and final presentation of ingredients according to the 49th State Brewing Company's recipes and specifications and ensuring the quality of cooked/prepared food by testing them. These individuals will utilize a large range of kitchen skills, including: slicing, grinding, frying, and baking during food service. Linecooks are also responsible for the detection and disposal of unattractive and spoiled foods. They will promote safety culture in all areas in the work place, including food safety, customer safety, and the safety of team members.
Job Duties (may include, but are not limited to):
Performs a variety of advanced food preparation tasks
Routinely,prepares and stocks the food assembly line for service, and in addition, replenishes the service line, as needed
Accurately assembles food in a timely manner, as ordered, during all meal services
Observes company health, sanitation, and food quality policies
Assists with cleaning and sanitation of kitchen and food items
Works to produce food items so tickets can be sold hot and together.

Work Environment
This position operates in restaurant/kitchen setting. There are stairs and uneven surfaces. The noise level in the work environment can be loud. The employee may be exposed to hazards including, but are not limited to, slipping, tripping, and falls. Kitchens can be hot, noisy and stressful linecooks need to be able to work efficiently and quickly to be successful. It can be dangerous connect with sharp hot tools can result in cuts, bruises and burns being a part of the shift. Frequent hand washing is required due to staff interactions in food prep areas. Job responsibilities may include working outdoors in the Denali,Alaska area in Spring and Fall, when temperatures are at or below freezing and walking surfaces may be slippery.

10% Keeps spoilage/waste to a minimum by utilizing proper quantities and rotating products.
10% Keeps all refrigeration, storage, and working areas in clean, working condition to comply with health department regulations
5% Organizes and transfers food items into lexans as needed, label and date for proper use and identification.
5% Turns on or off all kitchen equipment, such as stoves, ovens, grills, broilers, heat lamps, steamers, fryers, etc. and ensures all is in proper working condition.
SUPPORTIVE FUNCTIONS In addition to the performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the company.

Summary of position:
The primary purpose of this position is to be responsible for maintaining and setting up food production and quality control of all meat, fish, fowl, sauces, stocks, seasoning and all other food items prepared in the different kitchen stations to ensure that every dish is prepared to proper specifications in a timely and consistent manner.
