PHYSICAL DEMANDS

Position Summary
Responsible for overall performance of Culinary Operations in the Restaurant. The BOH Line Cook/Prep is responsible for ensuring guest satisfaction through excellent food quality, preparation, and presentation. The BOH Line Cook/Prep Cook will collaborate with the Manager to ensure the complete satisfaction of guests at the restaurant as a result of the food being prepared and served. This position contributes to the planning, organization, and training necessary to achieve restaurant objectives in food production, guest satisfaction, increased sales, managed costs, employee retention, communication and awareness, food quality, and compliance.
This position consistently demonstrates, as well as notifies management to enforce, company policies, practices, and procedures.
Requirements
POSITION QUALIFICATIONS
At least 2 years experience cooking in a restaurant kitchen
Demonstrated success in culinary excellence and food service hospitality
Knowledge of OSHA and EEOC regulations, restaurant/food safety procedures
Point of Sale (POS) knowledge/skills preferred
Ability to successfully perform all job duties of the Line Cook/Prep Cook role
Food Safety/Food Handler certification required
Strong organizational skills with excellent oral and written communication skills and the ability to communicate with guests, staff, and management.

Key Responsibilities
Assist in set up/preparation of culinary program for the season and on a daily basis

Work line, salad station, prep station, and any other stations as needed.
Control pace of food orders/set tone for ticket flowing process
Operate, maintain, properly clean deep fryer, broiler, stove, steamer, food processor, oven, steam table, flat top grill etc.
Advise in preparation of ingredients for cooking, including portioning, chopping, storing food
Label, date, store, rotate all products while maintaining assigned stock levels. Control food items requested, maintain without over production
Demonstrate proper-efficient production of food items to achieve maximum productivity
Assist in set up/break down of workstations
Follow all company safety and security policies/procedures
Provide support on any other culinary-related tasks as assigned by supervisors

Pay Details:
The starting hourly rate for this position is $23.00 per hour.
Line Cooks support kitchen operations by assisting Chefs and other kitchen staff. This position is in the Food and Beverage Department of Great Park Ice and Sports Complex. Hours for this position fluctuate depending on the arena event schedule.
Responsibilities
Fully understand temperature controls and the proper equipment to monitor temperature by completing daily Time and Temperature logs for your station
Ensure accurate labeling, dating, and rotating using the FIFO method for all raw and prepped food products
Know the eight most common food allergens, and follow the standards set at Great Park Ice and Sports Complex: 1) Milk, 2) Eggs, 3) Fish (bass, flounder, cod), 4) Shellfish (shrimp, crab, lobster), 5) Wheat, 6) Peanuts, 7) Tree nuts (almonds, pecans, walnuts), and 8) Soybeans
Follow recipe guidelines to prepare food based on the current menu
Practice proper work procedures, safety, and sanitation standards
Engage with venue guests and team members to ensure exceptional hospitality is always provided/received
Maintain food temperatures, food quality, and appearance of prepared food to our established standards
Know all menu items, ingredients, and preparation
Be comfortable with the arena and know how to navigate it personally to assist guests
Support any other Food & Beverage departments as needed
Work with operations counterparts to ensure event standards of service are reached
Additional responsibilities and tasks as deemed appropriate by the F&B management team at Great Park Ice and Sports Complex
Skills
A minimum of 12 months of culinary experience as a member of the Great Park Ice and Sports Complex Culinary team
Must demonstrate excellent knife skills and butchery procedures
Display excellent cooking skills by skills test (determined by Chefs)
Able to work all kitchen stations equally well
Excellent verbal communication skills
Solid organizational skills
Able to articulate par levels from any given station
Able to oversee multiple projects at one time
Working knowledge of state and local health code requirements
Able to work a flexible schedule in all kitchen locations on any given day
Team player
Must have mastered all responsibilities related to Cook 2, including multiple kitchen utility

Cooks Summary:
Our culinary cooks maintain outstanding customer service in processing orders quickly, accurately, and efficiently, clean food preparation equipment and work area, organize, load and unload inventory, and put merchandise away. Prepare food for customers, prep and maintain proper levels of food for shifts. Some tasks may include ensuring that ingredients are stored properly and maintaining an inventory of food and other items needed for the grill station. In addition to preparing grilled foods, may also fry, bake, or microwave meat and poultry as part of their duties. May also cut or carve meat, assemble measure, and mix other ingredients for dishes. Responsible for cleanliness of all equipment and wares used.

Requirements
