Measures and mixes ingredients according to approved recipes, using blenders, mixers, grinders, slicers, etc. * Follows directions for selected number of servings. * Uses correct measuring equipment. * Uses correct pans, etc. to ensure adequate number of portions is obtained. 3. Makes gravies, soups, entrees, casseroles, and desserts meeting established dietary guidelines. 4. Cooks meat, fish, and poultry in a variety of ways such as baking, roasting, broiling and steaming. 5. Prepares food to retain quality and nutritional value. 6. Prepares texture modified foods according to IDDSI requirements. 7. Utilizes leftovers in a practical and safe manner. 8. Tests foods being cooked to ensure doneness. Adjusts heat controls as necessary. 9. Ensures meals are ready at specified times. 10. Serves food on tray line. * Dispenses food in a uniform manner using portion guidelines, unless otherwise noted. * Notes patient food preferences or dietary intolerance. * Ensures that items selected on menu are issued when marked. * Places items neatly on plate and tray. * Serves meal in a timely manner. 11. Always observes infection control practices. * Maintains kitchen in a clean, neat, and organized manner. * Implements "clean as you go" strategy. * Monitors food and equipment temperatures. * Utilizes proper hand washing techniques. * Sanitizes surfaces after contact with raw eggs, fish, meat, and poultry. * Sanitizes cutting boards after each use to prevent cross contamination. * Follows cleaning schedules and records completed jobs. * Uses "first in, first out" procedures. 12. Performs all aspects of patient care in an environment that optimizes patient safety and reduces the likelihood of medical/health care errors. Hours will be dependent on patient census and workload. Ability and willingness to work a flexible schedule, to include after-hours and weekends as necessary.
