Job Responsibilities
Assists with preparation of food for cooking which includes using recipes, measuring, mixing, and planning cooking schedules and sanitation.
Prepares servings which include proportioning/portion control.
Ensures that kitchen area, storage areas, and equipment are clean and orderly at all times.
Ensures that food is stored, labeled and rotated properly.
Checks trays to assure proper service of diet according to diet order.
Ensures that food is prepared and served in a timely manner
Delivers food throughout main facility when necessary. Uses own initiative to do related duties as necessary.
Participates in the Quality Assurance Assessment system; Mealtime Assessment, Environmental Assessment; Interaction Assessment and Third Shift Assessment.
Keeps Lead Cook informed of problems in the department (i.e. equipment and staff issuers) Informs Lead Cook of foods needed.
Physical requirements to perform essential functions of the job included: Regularly required to lift 30 lbs. Must be able to lift a minimum of 70 lbs. Must be able to pull a minimum of 50lbs. Must be able to squat, kneel, crawl, crouch, climb, and stoop. Must be able to regularly use hands to finger, handle, or feel objects, tools, or controls. Required to regularly stand and walk. Must be able to demonstrate proficiency in CPR from the floor level requiring to work on hands, knees, bending, standing and lifting. About This Position
This position is working inside a jail/correctional facility at the Wake County Detention Center.
The Cook is responsible for accurately and efficiently preparing a variety of food items in accordance with assigned work instructions, menus and guidelines while following food safety and food handling procedures. The Cook also demonstrates experience and knowledge in the preparation of hot and cold food items and all standardized knife cuts. He/she must be able to multi-task and stay calm under pressure, exercising quick problem-solving skills to resolve issues that potentially arise. Basic Qualifications: Demonstrated history of related experience as a cook/baker in a large institutional kitchen, or in the military as a Cook. Certificate in food handling/sanitation methods, or SERVSafe certified preferred.
Responsibilities*:
Prepare meals using established recipe cards, production procedures, and systems while ensuring that all tasks are done in accordance with SOP. Must be able to use standardized measuring cups, spoons, knives, forks, large kitchen utensils, pots and pans.
Prepare food to coordinate with meal serving hours so that quality, temperature, and excellent appearance of food are preserved. Ensure that the progressive cooking technique is utilized in preparing all meals. Operate basic kitchen equipment, stove, oven, microwave, refrigerator, etc. Judge the appearance of food being served and recommend changes if necessary.
Determine amount and type of food and supplies required using production systems.

Store food properly and safely; date-mark items.
Knowledge of
Safe operation and maintenance for all kitchen equipment.
Proper food sanitation and storage practices.
Basic arithmetic, simple record keeping, and portion control and ability of deciding how many portions/servings in a container/pan.
The characteristics of various foods prepared. e.g., color, consistency, volume, and cooking time.
Cooking methods involving all types such as baking, grilling, frying, steaming, boiling, etc.
Ability to:
Follow oral and written instructions such as worksheets, menus, and schedules.
Ability to follow standard recipe cards and worksheets as to the number of portions to prepare, etc.
Planning, coordinating and time sequence steps needed to prepare food on time to minimize overcooking or waste.
Communicate and interact among management and personnel.
Physical Requirements
May frequently require lifting or moving objects weighing up to 50 pounds.
Duties require considerable walking and standing for prolonged periods of time.
Tasks may include frequent bending, stooping, and reaching.

The Job

Job Duties Include:
Set up equipment and prepare food based on the business forecast?and?catering contracts.
Prepare salads, sandwiches, cold and hot food entrees and other prepared foods according to portion and quality standards specified in recipes.
