The Rotational Hotel Cook, Level 2, position is responsible for the preparation, production, and presentation of a variety of foods, completion of production sheets and with other associated food service activities. This position will support the Qavartarvik Customer Lodge, a 109-room hotel in Bethel, AK, with a full service restaurant and cafe.
This is a rotational position in Bethel, AK. The rotation schedule will be 4 weeks on and 4 weeks off. Lodging and three meals per day provided. The point of hire origins are Anchorage, AK and the YKHC Service Area.
Responsibilities
* Properly, safely, and efficiently prepare food products while following standard food-handling procedures.
* Performs all main line food production duties with specific items determined by assigned shift.
* Review the needs of the day with assigned supervisor(s), completes production sheets, reviews maintenance reports, and verifies supply needs and availability.
* Assists assigned supervisors with menu and recipe development.
* Is responsible for quantity and quality control in food production as well as overall sanitation of assigned areas.
* Assists in the supervision and training of food service personnel.
* Arranges for kitchen helpers/assistants to complete smaller item preparation.
* Verifies and oversees food serving lines, areas, etc., making sure they are properly stocked, set up, and cleaned.
* Ensure work areas are thoroughly cleaned and organized prior to the end of every shift, providing a seamless transition to the next shift or rotation.
* Using the working knowledge of all general food service area personnel, this position "fills in" for any one of these positions at a moment's notice.
* Observes and instructs others on the proper rotation procedures to be followed for produce and dairy products.
* Maintains food production equipment and storage areas following proper sanitation, safety, and operational procedures.
* Has ability to recognize and use proper PPE for the job tasks.
* Assist in the supervision and training of food service personnel.
* Adhere to all safety policies, requirements, and training.

Qualifications
* High school diploma or GED equivalent.
* Must have two (2) years of verifiable line cooking experience in a commercial kitchen or food service operation in a restaurant, hotel or hospital.
* At least three (3) years of related food preparation experience.
* Must have knowledge and training in using a variety of food production equipment.
* Experience in batch cooking.
* Cleaning and maintaining food service equipment.
* Food Handler card, Alaska Food Workers card, or ServSafe certification within 30 days of employment.
* Must be fluent in speaking, reading, and writing English.
Preferred Qualifications
* Preference given to candidates with lodging industry experience.
* At least two (2) years of directly related vocational training (candidates without such training need two additional years of related experience), preferred.

THE ROLE
This is a hands-on position, providing the highest degree of professional catering service to guests with the goal of achieving customer satisfaction and retention.

Once the station is set up the individual must stand by station and be ready to greet the guests and begin service. Standing at parade rest with hands behind their back.
Respond to all guest requests with an expedient, cheerful and helpful manner.

a) Never allowing a water goblet to become less than ½ full.
b) Provide guests with an opportunity for at least two cups of coffee minimum. Once after dinner, and again after dessert.

Give a menu tour, guide guest though the ordering process, and offer the meat tray presentation. Answer menu questions and follow menu merchandising procedures by listening, explaining specials, suggesting items, and up-selling.
Follow standard procedures for accurately taking and inputting orders in accordance with standard procedures for timing of courses.
Pick up orders, completing plate presentation if needed.
Serve orders, ensuring accuracy and addressing any concerns or requests. Check back with guests within the designated time frame to ensure satisfaction.
Perform pre-bussing and table maintenance duties throughout the meal. Offer desserts and additional beverages as needed.
Audit and present check; accurately complete payment and tip-reporting.
As they leave, thank Guests for dining with us and invite them to return.
Bus, set, and re-set tables as needed. Perform side duties, closing duties, and other related duties as assigned by Manager(s).
Assist with Prime Society service and encourage membership.
Follow Eddie Merlot's policies, procedures, standards, and performance expectations, as well as applicable laws and regulations related to liquor, food handling, sanitation, and safety at all times.
Communicate information regarding guest requests or complaints and ideas for improvement to Managers.
May be scheduled to work meetings, banquets, and special events.
Maintain a good team-work environment by willingly assisting other team members with their station duties and sidework when there is a need and/or when available.
