ESSENTIAL DUTIES AND RESPONSIBILITIES:
The essential duties and responsibilities of this position include, but are not limited to, the following:
Operational
* Maintain a neat, well-groomed personal appearance at all times and observe company dress regulations; must wear an approved hat or hair net.
* Cook "Nixtamal"; operate the mill (dough); package, count and even up "tortillas".
* Greet all customers and provide them with prompt and courteous service or assistance.
* Learn all the products' names and prices used in the Tortillería department.
* Maintain general housekeeping and sanitation standards in compliance with store policy, department standards and state and local health regulations on a regular, ongoing basis.
* Handle damaged and spoiled products according to company policy and assist in controlling the level of damaged goods.
* Prepare the machine for operation by equipping it with the appropriate tools; run and monitor the machine while it is working; set up and operate machines according to blueprints and specifications; select, position, Tortilla cutters and fixtures onto machine.
* Exercise quality control by comparing whatever product the machine produces Tortillas, Tostadas, Chips, ETC.
* Perform any other work-related duties as assigned.

* Maintain good communication in the department and throughout the organization.
* Assist in training associates when assigned.
Safety
* Ensure that all tools and machines are in good working condition.
* Inspect machines periodically throughout the shift; adjust machine speeds

Implement Just in Time (JIT) principles in a reliable on-time delivery of high-quality short shelf-life product through the supply chain. Oversee plant production demand, sanitation, and staff scheduling procedures. Align, teach, coach, manage plant supervisors to focus on Key Performance Indicators (KPI's) and succeed on plant objectives. Being a 7 day a week/ 24 hr continuous operation, the Plant Manager must be willing and able to visit and work in all the areas as needed at various times, primarily in the second shift. There will be routine interaction and collaboration with Quality Assurance, Human Resources, and Supply Chain on common goals and objectives.
Qualifications:
* Specialized training or practical experience with implementing JIT, Lean Manufacturing, QRM, TQM, Kaizen or similar in a multi-shift production operation
* Certification or proven application of skills and/or special training in Lean Six-Sigma or other similar process improvement technics

Works in conjunction and follows direction from QA Director in the implementation of the Food Safety program. Maintains Plant's food contact surfaces and non-food contact surfaces in all areas & equipment in pristine and optimum conditions throughout the shift. Executes Company's GMP program and strictly abides by its policies. Under the direction of Quality Assurance, executes the food safety & quality assurance programs of the plant.
Under the direction & supervision of Sanitation Manager & QA, works with specialized vendors to develop, implement, and execute all sanitation standards operational procedures, (SSOP'S).
Assists Quality Assurance in the implementation and monitoring of all USDA pre-requisite requirements such as Listeria, allergens, and traceability.
Assists Sanitation Manager in managing all cleaning-related chemicals in plant. Performs the correct dilution ratios of chemicals and trains and monitors that the Sanitarian team abides by them.
Responsible to always wear appropriate safety gear while performing work duties and ensures that all personnel under his supervision wear it as well. Reports immediately any deviation or policy failure.
Ensures that all equipment is properly and safely disassembled, clean, rinse & sanitize and reassemble back together in a proper and safe way, according to Safety & SSOP guidelines.
