ESSENTIAL DUTES AND RESPONSIBILITIES

Reporting to the General Manager of Bon Appetit, this position performs the following essential duties and responsibilities:
Greet every customer with a smile and a warm welcome. Swipe student ID cards and take cash from paying guests, as well as answer questions about the daily menu.
Understand and follow proper cash procedures as trained. Count cash bank and verify opening balance on cash reconciliation work sheet, count out the cash sales from the meal and complete the cash reconciliation work sheet. Deposit all sales with the Dining Hall Manager and receive verifying signature.
Maintain a clean and organized environment at the cashier station, including cleaning doors before and after opening, wiping down tables and chairs as appropriate.
Ensure that all signage and menus are in their proper place and well presented prior to opening for the meal service. Ensure that the checker's desk is neat and well presented.
Ensure To Go items are stocked before service and removed after.
Wipe down tables and chairs before/after the meal service. Sweep, mop, and vacuum the dining area maintaining the cleanliness of the dining area.
Follow proper food preparation and sanitation directives as established by the Health Department. Comply with internal policies and procedures as they apply to food, sanitation, and safety within the Dining Hall department. This includes, but is not limited to, keeping work area clean, properly/safely using equipment and keeping floor free of food/liquid that may be a potential safety hazard, and adhering to assigned work schedule.

JOB PURPOSE:
Prepare a variety of hot foods such as soups, stews, sauces, and casseroles and desserts designated by Chef de Cuisine or Head Cook. Works from standardized recipes and receive general instructions. Responsible for the correct portioning, seasoning and timing on the menu items. Work under direction of a Chef de Cuisine or Head Cook. Responsible for preparing any menu item from prepared recipes. Direct Cooks' Helpers (FoodServiceWorker III) in the preparation of food and work together with other Cooks in the preparation of meals. Responsible for quality and temperature control for food. Use independent judgment in the course of meal preparation.
CORE DUTIES:
* Prepares hot foods including entrees, vegetables, starches, sauces, and gravies
* Assumes 100% responsibility for quality of products served in conjunction with the chef.
* Work with Chef de Cuisine or Head Cook to understand and prepare new menu items.
* Store and record leftovers.
* Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
* Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
* Portions food products prior to cooking according to standard portion sizes and recipe specifications.
* Maintain a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment.
* Prepare items for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
* Follows proper plate presentation and garnish set up for all dishes.
* Assists in food prep assignments during off-peak periods as needed.
* Transmit work instructions and specifications received from supervisor to other workers.
* Assist Head Cook or supervisors or other employees to solve task-related problems.
* Order supplies from storeroom as needed.
* Ensure that sanitation standards are maintained. Clean and assembles equipment after each use.
* Other duties as assigned with classification. Required to abide by all health codes mandated by the health department.

* High school diploma and a minimum of 3 years experience in commercial kitchen preparation and cooking, with an understanding of proper food handling and safety, knowledge of safety and sanitation standards, and culinary fundamentals (i.e. knife skills, HACCP, methods of cooking, etc.

JOB PURPOSE
Employees at this classification carry out a variety of food preparation and/or catering tasks including cooking a variety of hot foods, sauces, and casseroles and may bake and prepare desserts. In large dining halls, they may prepare selected menu items designated by a higher-level worker or supervisor. Food is prepared from standardized recipes and general instructions but are responsible for the correct portioning, seasoning and timing on the items they prepare. May be responsible for the efficient operation and maintenance of a dining hall storeroom and coordinate the work of at least two other workers in a large dining hall. May review daily menus with supervisors, determine work priorities within menu guidelines, assign specific daily duties to other workers. Employees at this level do not have supervisory authority over other employees and are not expected to exercise independent judgment on final decisions regarding quality or quantity of work produced by such employees, or personnel actions such as hiring, promotion, discharge or disciplinary measures.

JOB PURPOSE
Employees in this classification carry out a variety of food preparation and/or catering tasks including cold and hot food preparation, providing excellent customer service Work is performed under the general direction of a higher-level worker and/or supervisor. Food preparation requires a range of cooking skills. Food is prepared working from standardized recipes and daily production sheets and decisions are made regarding the quality of produce, portioning of ingredients, judging the timing, temperature, seasoning and attractiveness of the final product. JOB PURPOSE Under general supervision of a higher-level worker or supervisor, employees in this classification perform front line and/or customer facing services in a foodservice operation.

REPRESENTATIVE DUTIES
The following duties are typical for this classification.
* Leads, plans, assists, and reviews the work of staff responsible for performing a variety of tasks in the efficient operation of the foodservice program including setting up serving areas, setting up steam tables and ice trays, and setting out food and beverages; plans, organizes, and implements activities of assigned foodservice area; adjusts assignments.
* Provides lead support to employees in their areas of work including proper foodservice methods, procedures, and techniques; instructs others in food preparation.
* Oversees the use, care, and operation of foodservice equipment including grinders and slicers.
* Verifies the work of assigned employees for accuracy, proper work methods, techniques, and compliance with applicable standards and specifications; ensures adherence to safe work practices and procedures.
* Assists in the opening and closing of assigned area; turns on lights and starts ovens as assigned.
* Operates and/or oversees the operation of the computerized point of sale system (POS), trains others in cash register procedures and operation; accounts for register receipts; counts money; opens and/or closes register.
* Oversees and participates in preparing and serving a variety of foods; maintains foodservice facility in accordance with health and sanitation standards.
