JOB DESCRIPTION AND POSITION REQUIREMENTS • Set up cash register for operation; close out register at day's end and place money in safe, audit monies, take orders, ring up sales • Operate cash register; make change as required, clear cash register date sales tapes • Close and lock snack bar at end of business • Check, stock, and rotate supplies, food stuffs, and products in cases and display shelves; order supplies as needed • Assist in taking inventories as required, requisition supplies • Slice meat, cheese, etc.; stock deli cases as needed • Serve food as needed, store leftovers properly • Prepare items for sale such as hot and cold sandwiches, pizza, etc., to customer's order according to prescribed recipes and standard procedures • Assist in food preparation and set up for catered events • Operate slicer, pizza ovens, coffee urns, scale, dish washing equipment, soda dispensers, espresso machine, grill fryer, steam table, ice cream machine, etc. • Ensure that condiment station is set up and that supplies and sanitation of condiment station are maintained including milk, juices, etc. • Check to ensure an adequate supply of dishes, utensils, items to be served, are maintained • Clean as well as direct part-time employees in cleaning the food preparation and service areas, dish room, dining areas and the equipment used in these areas • Clean tables, grills, ice cream machines, etc. • Sweep and mop floors • Answer questions for and assist in training part-time employees • Report the need for maintenance of equipment to the supervisor Job Requirements: Requires the use of commercial English, grammar and arithmetic such as addition, subtraction, multiplication and division, including decimals and fractions; simple use of formulas, charts, tables, drawings, specifications, schedules, wiring diagrams, together with the use of adjustable measuring instruments, graduates and the like requiring interpretation in their various applications; or the posting, preparation, interpretation, use and checking of reports, forms, records and comparable data. Over 3 months up to including 12 months of effective experience. RESPONSIBILITIES: * Sets up and breaks down (cleans) dish machine. * Runs conveyor belt and empties trays: * scrapes dishware, empties glasses, cups * disposes of paper items * loads glasses, cups, dishware and trays into racks * soaks utensils and then loads into holders * loads racks onto dish machine * runs dish machine * Loads glass and glassware onto dollies. * Loads dishware and glassware onto dollies. * Transfers supplies to service area: * dollies of clean dishware, utensils, etc. * napkins * Washes pots and pans by hand or by ware washing machine. * Sweeps and mops dining room floor. * Sweeps or vacuums floor mats daily. * Mops dish room floor, service area floor and kitchen floor daily. * Recycles plastic, cans and cardboard. * Sets up for meal: * runs clean dishes to service area * makes sure each area of service is supplied with appropriate: plates, bowls, etc. * Empties trash and replaces trash liners. * Cleans, sanitizes, sets up and breaks down the yogurt machine. * Cleans all equipment in the kitchen as directed by the supervisor. * Assists the Receiver as directed by the unit's managerial staff. * Adheres to standards outlined by sanitation program (ServSafe), and local, state and federal guidelines * Performs other job related duties as assigned or directs. * Essential staff must work on bad weather days. * Trains student staff on proper dish room techniques. * Supervises student dish room staff during meals. SCOPE AND COMPLEXITY: * Follows established work routings; periodic checks for performance; questions substandard/unusual conditions. * Work may be spot checked during a meal; but is usually subject to a general review at the close of the evening meal. * Errors primarily result in a loss of time. A loss of money may occur if the error causes a breakdown of equipment. * Internal contact involving routine reporting or exchange of information. * The work routine is static. Oral or written instructions are received from a member of the managerial staff when normal work routines change. * Work is performed in a usual food service environment; frequent exposure to loud noises, uncomfortable temperatures, and physical effort involving heavy weight, and long periods of stooping, standing and bending. SKILLS, ABILITIES, EXPERIENCE AND EDUCATION: * Ability to read and follow oral and written instructions. * Effective communication and active listening skills. * Ability to perform tasks that may involve lifting items weighing 70+ pounds, with or without reasonable accommodations. * Sufficient manual dexterity to perform tasks such as handling tools, equipment, or materials. * Ability to transport items and navigate stairs, with or without reasonable accommodations. * Ability to work in extreme temperatures. * Ability to view kitchen objects with or without reasonable accommodations. * Ability to be mobile between workstations and numerous campus buildings. * Ability to access items at various heights. * Working knowledge of safety precautions associated with the food service industry and chemical cleaning material / solutions. * Experience in working commercial dishwashing machine. SUPERVISION GIVEN None ESSENTIAL FUNCTIONS 1) Readies food items for meal service needs. a) Portions and plates food for patient, cafeteria and special function meals, as directed, following standard procedure. b) Mixes and portions nutritional supplements for patient meal service, as directed by Diet Clerk or supervisor. c) Assembles sandwiches and platters, as directed by production personnel. d) Fills hot beverage containers for patient meal, following standard procedures, assuring temperature retention. e) Makes coffee and related hot beverages, following standard procedures, immediately prior to the need for the product. f) Toasts breads, bagels, muffins and similar products for meal service needs, following standard practices, assuring proper timeliness and quality of the product. g) Restocks supplies, as necessary, assuring adequate supplies for meal service. 2) Provides meal service in the cafeteria, assuring continuous service. a) Assembles and places all necessary food and supply items in the cafeteria, following standard practices, prior to meal service needs. b) Serves customers in the cafeteria, assuring minimal waiting time. c) Restocks supplies, as necessary, assuring adequate supplies for meal service. d) Collects customer money at the cash register, as customers complete the service line, assuring correct per item charges and exchanges on monies. 3) Assists in the assembly of patient trays. a) Provides accurate patient tray service assembly at the station assigned by the supervisor. b) Demonstrates ability to accurately and efficiently work all tray line positions as assigned by the supervisor. c) Distributes tray carts to patient care areas, immediately as carts are ready for delivery. 4) Performs cleaning and sanitation services in the department according to schedule. a) Following schedules and standard procedures, cleans equipment and surfaces in the cafeteria, documenting activities on daily log. b) Empties returned tray carts, sort and rinses flatware and dinnerware, loads, operates and unloads dishwasher, and stacks or stores washed items as required, ensuring efficient operation. c) At completion of dishwashing activity, empties machine and completes cleaning and dismantling activities according to standard practice. d) Cleans and sanitizes food carts and dollies prior to each meal service, following standard practices. e) Washes and sanitizes pots, pans, serving equipment and other utensils and equipment, as assigned by supervisor, following standard practices. f) Collects and disposes of departments refuse. g) Performs general cleaning and sanitation duties, as assigned by supervisor. 5) Participates in providing meal service to special functions a) Assembles items for special function events, as directed by supervisor, assuring readiness prior to the event. b) Delivers special function meals to their designated service area at the specified time. 6) Participates in Quality Assurance and Quality Control activities in the department. a) Measures and records dish machine-operating temperatures daily, reporting exceptions to the supervisor. b) As assigned, measures food temperatures, making recordings of specified menus. c) As assigned, records refrigeration and freezer temperatures at the beginning of the shift, reporting exceptions to the supervisor. 7) Participates in in-service and continuing education programs sponsored by the department or Medical Center. a) Attends 100% of in-service programs required of this job classification. b) Attends continuing education programs to enhance professional growth and development. Critical areas include monitoring of food portions in order to minimize waste and maintaining sanitary conditions. ESSENTIAL JOB FUNCTIONS 1.
