Job DescriptionJOB PURPOSE: Our bakers are Passionate, take Pride in the craftsmanship of all Pollys products. Maintains integrity of the Pollys Brand through commitment to deliver quality in production of our goods and recipes. Maintain Pollys standards of Fresh, Friendly, Above and Beyond Expectations. JOB ACCOUNTABILITIES: Prepare products using all methods, established portions, and recipes for baking preparation. Manages daily production and communication of product counts with Coaching team. Prepare breakfast items for bake including quiche, cinnamon rolls, muffins, etc. Prepare and bake bread items including loaves, buns, rolls, cookies, etc. Daily preparation of seasonal fresh fruit for pies and toppings. Clean all bake related machines, workstations, transit trays, and instruments too large for dishwasher. Responsible to properly label, organize and rotate bake ingredients in freeze and storage areas; Rotates bake inventory (merchandise and product supplies) to maintain freshness and quality, make products fresh daily. Receive orders, check invoices, and put deliveries away as needed. Prepare kitchen for the day including making sure everything is secure, lighting the oven, etc. Notify the Coaches of any food quality issues, inconsistencies of product with recipes, low inventory, etc. Maintain a clean and sanitary bake area and station at all times. Comply with established weight and measures, health, sanitation, and safety policies, procedures, and guidelines. Protect the Brand through promoting and providing extraordinary service when interacting with team members and guests. Demonstrate dependable leadership qualities to work primarily unassisted, and is proactive to escalate matters as needed. Flexible to cross train in other functions for back of the house/kitchen areas. Must be available to work morning, afternoon, and evening shifts; includes weekends and holidays. SKILLS AND EXPERIENCE REQUIRED: At least 1 year prior work experience as a cook, baker, or enrollment in a culinary program. Ability to use scales, thermometers, measuring, and divide and multiply recipes. Good organizational, communication and problem-solving skills. Experience working with baking equipment including oven, mixers, etc. Clear understanding of kitchen and food safety guidelines. Valid Food Handlers Card (if required by county)

Principle Duties: Responsible for preparing dessert items in accordance with production requirements and Magnolia quality standards while maintaining a safe and sanitary work environment. Prepares desserts of consistent quality following recipes and production; start food items that are prepared ahead of time; date all food containers; note any out-of-stock times or possible shortages to the Kitchen Manager. Stocking prep cook area with all goods needed for their shift, butter, milk, Nilla wafers, bananas, coconut, nuts, storage containers, utensils, etc. Cleaning prep cook area including walls, tables, all mixers, sweeping and mopping floor. Stocking goods for the next prep cook shift, especially butter, so it has time to soften. Keeping an inventory of icings and fillings are needed and keeping them stocked as necessary. Keeping the Production Manager/Floor Supervisor aware of progress throughout the day, as well as bring to the Manager's attention of any stock that we are running low or out of. When all tasks on list are completed, then the prep cook is responsible for helping all back of house staff. This includes, popping cupcakes from the pans, wrapping cupcakes, stocking/cleaning baker's refrigerator, helping porters and cake icers as needed Physical demands and work environment: Position requires standing and walking for period of 3-5 hours without a rest break. Occasional moderate to heavy lifting and carrying, bending and reaching overhead may be required. Work environment includes working with hot cooking equipment. A bread baker at the Fourth Coast's primary role is making artisan bread using great quality ingredients. The bakery serves not only the customers of Fourth Coast Cafe, but also supplies the bread for the restaurant, Crow's Nest. Each bread baker is expected to replicate our recipes consistently to produce the product that our customers have grown to expect. The expertise of our bakers is relied upon as to assist in curating new products to our list of offerings.
