The Role⦠At Le Vallauris a Dishwasher (Porter) is responsible for supporting the overall operation by organizing and cleaning dishes in the kitchen such as pots, pans, silverware, dishware, glassware, and kitchen equipment. Porters maintain the cleanliness and order in the kitchen as well as maintaining the dishes in the correct storage area.
A successful Porter will proactively complete and tasks like; discarding rubbish as needed throughout the shift, operating industrial cleaning equipment such as the dishwasher, and occasionally support the Chef on Duty.
Main Duties
* Rinse, clean, organize, stock and maintain proper amount of pots, pans, silverware, dishware and glassware to support daily operations and business volumes

* Follow checklists and standard operating procedures

* Limit breakage, practice proper handling and look after inventory for the daily operation to prevent loss

JOB PURPOSE: Protect the Polly's Brand by upholding the standards of Fresh, Friendly, Above and Beyond Expectations. The dish and general utility position is responsible for maintaining cleanliness and sanitation standards for pots, pans, dishes, cooking equipment, etc., using machine and manual cleaning methods. Ensure the dishwashing area is maintained as a clean, safe and sanitary facility.
JOB ACCOUNTABILITIES:
Sort and rinse dirty dishes, pots, pans, and other cooking equipment and place them in racks to send through dish machine.
Maintain clean dishwater at all times.
Wash pots, pans, and trays by hand.
Remove trash and garbage to dumpster.
Set up or break down dishwashing area.
Clean and roll/unroll mats.
Fill/empty soak tubs with cleaning/sanitizing solutions.
Sweep/mop floors and clean drains.
Assemble/disassemble dish machine.
Sweep up trash around exterior of restaurant and garbage dumpster.
Follow all safety procedures including proper lifting, knife handling, personal protective equipment, etc.
Conduct general store and restroom cleaning as directed.
Wipe up any spills to ensure kitchen floors remain dry.
Do not touch dirty dishes before touching clean dishes without washing hands first.
Keep the dish machine clean and report any functional or mechanical problems immediately.
Notify the Manager on duty any time dish machine wash or rinse cycle falls below safety standard temperatures.
Measure and assemble ingredients and prepare recipes and menu specifications in accordance to Polly's Pies recipes.
Complete other various tasks including salad bar prep.
Required to work varied hours; may be needed to work daily dinner rush, weekends and/or holidays.
Fill in for different positions according to business needs when necessary.
