The Prep Cook/Dishwasher is responsible for preparing and cooking a variety of food products, including meats, seafood, poultry, vegetables, sauces, stocks, breads, and other food items using various equipment and utensils in accordance with the Daily Prep List. This position will collaborate closely with the Lead Cook and Foodservice and Retail Manager, and will also be responsible for washing dishes, sweeping, mopping, and maintaining cleanliness in all areas as needed. Essential Responsibilities Complete DOH Food Safety and Sanitation Course successfully. Refer to Daily Prep List at the start of each shift for assigned duties. Clean and sanitize workstation area including tables, shelves, walls grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment. Use the Standard Recipe Card for preparing all products. Weigh or measure ingredients. Portion according to standard portion sizes and recipe specifications and wrap the food or place it directly on plates for service to guests. Wash, peel, and cut various foods, such as fruits and vegetables, to prepare for cooking or serving. Mix ingredients for green salads, molded fruit salads, vegetable salads, and pasta salads. Our Dishwashers assist management with the receiving of deliveries while maintaining the proper storage and rotation of products. They perform in-store janitorial cleaning if applicable.
