Prep cook job in San Jose, CA
A Cook has the same responsibilities as a Chef (Cook Lead) except he/she is not in charge of the kitchen, does not determine the merchandise to be ordered, and takes orders as to kitchen operation from the Chef (Cook Lead -Supervisor). Shall not be required to do general cleaning other than the tools of their trade and the necessary cleaning of their immediate station.
This is an on-call union position, and all individuals in this role are represented by UNITE HERE! Local 19.
POSITION RESPONSIBILITIES:
Prepares and maintains all hot and cold foods according to work orders, schedule, and production sheets.
Stores all food in refrigerated boxes including covers, labels and dates, using the proper containers to protect against waste and spoilage.
Use leftovers and maintain proper storage of leftovers on hot food side. Label and date all food.
Maintains kitchen area and tools of the trade clean and organize according to department standards and ECO-SURE
Rotate all foods and correctly fill out production charts.
Perform other related duties as required.
POSITION REQUIREMENTS:
Able to speak, read and write in the English language effectively.
Must have a minimum of 1-year experience as a cook.
Scheduling flexibility is essential, willing to work evenings, nights, weekends and holidays.
MUST have a valid California Food Handler Card and basic knowledge of ECO-SURE sanitation standards
Knowledge of cooking methods including broil, sauté, grill, making soups and sauces and general food prep, proper knife handling, maintaining proper temperature, sanitation, light dessert knowledge required for plating specifications.
Must have basic knowledge of food and beverage preparation and fundamentals of cooking.
Must have knowledge of operating all kitchen equipment, i.e., stoves, ovens, broilers, slicers, steamers, etc.)
Basic mathematical skills necessary to understand recipes, measurements, and portion sizes.
Must be able to work in a high stress environment and perform duties within extreme temperature ranges.
Ability to do work standing up and walking for long periods of time
Ability to lift up to 50 pounds in weight (trays, refuse receptacle)
Ability to move heavy (200+ pound) wheeled carts
