    Leprino Foods Company, a global leader in the dairy food and ingredient industry, is seeking a Cheese Extruder Operator to join our team located in Roswell, NM. Leprino Foods is the world's largest supplier of mozzarella cheese and one of the largest suppliers of premium dairy nutrition ingredients. Our customers and business partners span the globe and include many of the world's largest food companies, restaurant chains and distributors. The Extruder Operator maintains constant levels and proper mixture of all ingredients being added to the cheese; Maintaining a clean environment and adhering to all the GMP's, SOP's, and Critical Control Points pertaining to Food Safety and USDA regulations. The Extruder operator must be able to communicate well between all departments such as Whey, Processing, Cheese, etc. Must be able to make computer adjustments to start the CIP process and control product salt set points, cheese speed, etc. This position must know how to properly make adjustments to control ingredients that go into the cheese (salt, liquids, powder, modifier, etc). The Extruder Operator also requires a constant data entry of pH levels, ribbon dimensions, weights, etc. and input this information into the computer. The incumbent performs CIP (Clean in Place) and applies proper chemical dosage to effectively clean all equipment being used. We Ask of You To: * Inspect and adjust quantities of ingredients going into the cheese. Check salt, powder, and modifier levels every hour. * Check ribbon thickness and moisture every hour. Make necessary changes as needed. * Obtain cheese temperatures, pH levels, and salt set points and input this information into the computer. * Inspect all equipment involved in the process, wet mixers, pre-heat tanks, dry mixers, extruders, line 1, line 2, and slurry. * Properly clean and sanitize all equipment as required by company procedures, maintain good housekeeping in area. * Maintain Good Manufacturing Practices at all times. * Demonstrate good safety behaviors and constantly apply them by following all applicable safety rules and regulations. * Communicate as required with Supervisors, Forepersons, other departments, and coworkers. * This position is responsible for food safety and food quality. * Perform other duties as assigned by Forepersons and Supervisors. * Ability to work in an environment that is higher in ambient temperature and humid * Ability to work safely around chemicals. * Candidate must possess good communication skills. * Have the ability to work efficiently with minimal supervision.
