The Production Assistant (PA) works alongside the AEA Stage Management (SM) team to attend and assist with all scheduled rehearsals, technical rehearsals, dress rehearsals, and performances to ensure all call times are being met and all production equipment is kept in appropriate working condition. The PA shares the traditional responsibilities of both a PA and an ASM, and they also serve as part of the run crew (including scenic transitions, props hand-offs, and wardrobe changes) when shows move from rehearsal into tech. The Commercialization Tech is responsible for supporting the Research and Development Commercialization Department with a wide range of physical and clerical tasks as needed to assist in the process of developing bench prototypes of Intelligent Foods recipes. This position will report directly to the Culinary Product Development & Commercialization Chef, and will work in a commercialized R&D kitchen.
What will you be doing:
Manage and maintain an organized and well stocked test kitchen with equipment, staple pantry ingredients, dry goods, par stock and a regular cleaning regime.
Manage an ingredient requisition sheet and work collaboratively with cross functional departments to proactively acquire materials needed for daily kitchen work.
With a high degree of independence - scale ingredients, execute recipes and formulations, assemble bench samples, and perform other basic test kitchen tasks
Assist with the documentation of results, including step by step cooking instructions, recipe yields and photos of tray assembly for internal documentation
Help to create supporting operational materials and conduct product evaluations by testing multiple recipe versions on a weekly basis.
Help receive incoming packages for the test kitchen. Pack and ship out going benchtop samples as needed.
Help to perform and catalog meal and ingredient shelf life studies in conjunction with our food science and quality assurance teams.
Assist operational cooks on scale up, and first cooks for B2B and D2C meal components and production. Translating the R&D testing to operational success.
