Inspects and oversees all production line inspections of all finished goods manufactured in the production area.
Duties and Responsibilities:
Review the Batch Ticket Checklist for the following: Clearing area of previous job materials; correct packing materials on the floor for the job; encoding devices are set correctly for lot code and/or expiration date; set-up fill weights are in spec; label height is correct and signed-off label placement standard is nearby; all retain samples have been collected and taken to the Q.C. lab.
Check the Batch Ticket Bill of Materials/Component Sheet to be sure all parts are accounted for and that they are correct. This includes comparing Item Numbers and Item Description to carton labeling and the individual packaging components.
Check the filling equipment cleaning log to be sure it was updated when the last product was removed and cleaned.
Inspect at the first finished goods produced to be sure they look perfect. If the finished goods represent an item that we have not produced before it needs to be approved.
Q.C. Inspection Records. All out of specification results or defects should be circled and adequate notes of all follow-up action noted in the Job History Notes.
Q.C. Inspections should be completed four times an hour of run time. Run time includes additional packing, lot coding or labeling operations completed after off -line filling operations.
Look at finished goods for any/all defects as noted on the A.C. Inspection Records.
Report any/all problems to the Shift Lead immediately.
If there is a problem, ask the Machine Operator and/or Line Coordinator to stop the process immediately so the problem can be evaluated and corrected. This also prevents unnecessary or excessive rework.
Follow-up on defect problems by examining finished foods to be sure the problem has truly been corrected.

Ensure all refrigerated meat and poultry raw materials are handled in a safe manner and that required temperatures of product and room are maintained during the cutting and marinating process.
Fry Line
Ensure that all previously breaded, battered and baked meat and poultry products are cooked and/or cut at the required times and temperatures to achieve the minimum internal temperature/specification requirements.
Ensure the control of the physical aspects of the product such as sizing, uniformity, defects, batter pickup, flavor and odor. One or two pounds are weighed from each sample and product is graded as required for selected customer with results recorded in Processing and Finished Product grade sheet.
Packaging room:
Ensure the documented control of the cooling/freezing and packaging process so that previously Fully Cooked Products are cooled/frozen at the required times and temperatures to inhibit the growth of microorganism and preserve the product prior to packaging.
Ensure the elements pertaining to the monitoring and verification of metal detectors are in place so that all finished products are packaged in a safe manner to protect the consumer from potentially harmful metal objects.
Execute other duties as assigned in all areas.

Essential Duties and Responsibilities:
General Food Safety
Understands, follows and enforces all established Safety, Health, Food Defense, Food Safety, GFSI, SQF, FSMA, current GMP and Company policies, procedures and recognized practices.
Follow all GLPs (Good Laboratory Practices) and GMPs (Good Manufacturing Practices), including using appropriate tools (gloves, safety glasses, chemical aprons, etc.) to ensure chemicals and tests are handled and conducted appropriately and to ensure cross-contamination does not occur. Ensures that product quality is an absolute priority.
Product and Ingredient Testing:
Conduct quality control of raw materials, work in progress, and finished products to ensure that results meet specified requirements.
Check the quality of samples to ensure the color, flavor, salt, moisture, pH and acidity, etc. is consistent and that the product is free from discrepancies (lumps, specks, etc.).
Become proficient in all analytical procedures including, but not limited to, electric and manual titration, moisture and fat analysis, water activity, sieve, angle of repose, colorimeter.
Perform all analytical tests including: CEM fat and moisture analysis, Denver Instrument and microwave, pH, titratable acidity, salt, sodium, free fatty acid, cheese solubility test, capsicum heat test, ash and water activity.
Perform all Physical tests including: color by Hunter, Viscosity by Brookfield and Bostwick Consistometer and Bulk Density.
Clean, maintain, and calibrate laboratory equipment including scales, titrators, microwaves, stoves, etc.
Pull samples sanitarily for line tests, micro tests, retains, etc. and ensure retain library is up to date.
Stock and maintain an organized and clean environment in the labs to prevent contamination to the tests. Conduct product cook-ups, color and flavor checks, sieve analysis, microwave oven moisture.
Record Keeping and Production Compliance:
Check product labels to ensure product/lot/batch numbers are correct and the packaging is clean and free from defects.
Maintain accurate records of product specification test results on both the company's ERP system and by written documentation.
Assist supervisor in placing holds on products that are out of specification and track items in the ERP.
Conduct scale weight checks in plant.
Accurately weigh small amounts of ingredients for production.
