The Registered Dietitian helps to provide a nutritionally sound and cost-efficient food services program that will meet the needs of students while maintaining compliance with all local guidelines as they relate to nutrition regulations. Utilizes technical training and government-mandated nutritional standards on food health to develop healthy menu implementation plans. Will work closely with OpX, culinary, and management teams.
Job Responsibilities
Plan all Child Nutrition menus utilizing a menu planning software in accordance with USDA guidelines and Aramark menu strategy.
Maintains required documentation for USDA, state, local, client guidelines related to meal services (i.e. Nutrient Analysis of menu, CN/PFS labels, USDA Workbooks, etc.)
Coordinating use of USDA Foods/Commodities within menus. Supporting with annual USDA Foods orders.
Supports Food Management Process, oversees purchasing compliance & accuracy to menu, as needed supporting reviewing food orders.
Manages vendor/supplier relationships to ensure accurate stocking, availability, and delivery of food items.
Visits school cafes on a regular basis to assess operations utilizing audit tools (Controlling Food Cost, School Allergen Readiness Plan, Administrative Review Preparedness).
Assists with new employee training in areas such as adhering to food safety standards, menu & recipe compliance, and portioning.
Provide support and assistance to students who require accommodation for dietary needs or food allergies, may include menu development and training of front-line associates.
Support adherence to all client nutrition & wellness policies and contract requirements
Educates clients and consumers, regarding healthy food choices through school training and community outreach.

Qualifications
Registered Dietitian Nutritionist, or RDN Eligible within 6 months of hire.
Completed a minimum of a bachelor?s degree and course work accredited or approved by the Accreditation Council for Education in Nutrition and Dietetics (ACEND) of the Academy of Nutrition and Dietetics.
Registered Dietitian with Commission on Dietetic Registration (CDR): Successful completion of internship program (ACEND), satisfactory score on an exam, plus fulfillment of continuing education requirements).
Maintain applicable additional certifications, registrations, licenses, or credentials
Ability to maintain a friendly, efficient, positive customer service attitude toward customers, clients, and co-workers
Effective verbal and written communication skills

What you will do
Provides the Nutrition Care Process. Formulates and implements pediatric specialty medical nutrition therapy plan of care. Documents in accordance with policy, procedure, and clinical practice guidelines.
Understands and documents face to face and telehealth charging practices with subsequent input into the electronic charging system.
Screens, triages, and prioritizes medical nutrition therapy consults for all age groups (neonates, infants, pediatrics, adolescent, and adult.)
Completes nutrition assessments and identifies nutrition diagnosis/problem(s).
Identifies and documents differing malnutrition indicators in the following groups: neonates, pediatrics, and adults.
Monitors formula orders and calculates special recipes with or without additives for milk tech staff.
Identifies and integrates trends in anthropometic indices and biochemical data, implications of diagnostic tests and therapeutic procedures.
Performs pediatric nutrition focused physical findings to evaluate nutritional status throughout the lifecycle.
Performs and ensures proper athropometric data and proper measuring techniques, including pediatric specific head circumference, segmental length, and recumbent length, and applies values to appropriate growth charts.
Serves as resource for multidisciplinary team on proper anthropometric measuring techniques and equipment.
Performs increased frequency of monitoring and adjusts pediatric plan of care, as pediatric patients can become malnourished quickly.
Implements nutrition plan of care and works collaboratively with foodservice staff and milk techs to ensure conformance and continuation of said plan.
Functions as an integral member of the clinical interdisciplinary team and the Nutrition Therapy team.
Navigates wide network of pediatric formulas and additives and the corresponding companies to ensure tolerance and availability and patients fincial resources.
Works with case management and social work to identify available resources for formula supplies between WIC, insurance, and community programs. Documents need for each resource, how much will come from each resource, and assists with document completion for insurance, DME and community resource formula coverages.
Identifies goals and provides age-specific, culturally appropriate nutrition counseling and education to patients and their families/caregivers throughout the lifecycle.
Uses evidence-based nutrition practice guidelines and appropriate instructional methods and tools based on appropriate age groups.
Documents in medical record patient's and/or caregiver comprehension and anticipated compliance with nutrition guidelines in measurable terms. Completes Ad Hoc charting for in-patient.
Calculates special formula recipes for home and modifies as needed. Completes education with pt/caregivers, and documents formula education in the EMR.
Monitors, trouble shoots, and communicates outpatient issues and nutrition plan of care in EMR messaging when patients are between outpatient appointments and/or inpatient admissions.
Demonstrates professional development and leadership.
Demonstrates performance measurement and quality improvement.

* Work in an interdisciplinary position with the course director or other medical professionals to teach the nutrition/dietetic perspective of the course.
* Responsible for teaching students safety in the kitchen, including but not limited to knife skills, dangers of cross-contamination, and food allergies
* Works with Get Healthy UAMS (GHUAMS), Nutrition Services, Stocked n Reddie, and other entities/departments to educate the UAMS Community on healthy eating. This includes working with the UAMS Dietetic Interns to develop posters for health days (National Nutrition Month, etc) and to provide food samples, recipes, posters, and education materials to the UAMS community, videos, and food demos with GUUAMS and Stocked n Reddie and others.
* Works with Little Rock and other communities to develop programs to educate the community on healthy eating. This may include the Mexican Consulate, the Arkansas Minority Health Commission, the Central Arkansas Library System, the American Heart Association, the American Cancer Society, and others.
* Works with the UAMS CME department and the Culinary Medicine directors to develop CMEs on Culinary Medicine to educate not only the UAMS providers but also providers throughout the state. This includes presenting cooking demos and developing educational materials, including audiovisual aids, such as videos, PowerPoint presentations, brochures, etc.
* Perform administrative duties as assigned.
* Leads and/or participates in the writing and submission of grants

Monitors formula orders and calculates special recipes with or without additives for milk tech staff.
Identifies and integrates trends in anthropometic indices and biochemical data, implications of diagnostic tests and therapeutic procedures.
Performs pediatric nutrition focused physical findings to evaluate nutritional status throughout the lifecycle.
Performs and ensures proper athropometric data and proper measuring techniques, including pediatric specific head circumference, segmental length, and recumbent length, and applies values to appropriate growth charts.
Serves as resource for multidisciplinary team on proper anthropometric measuring techniques and equipment.
Performs increased frequency of monitoring and adjusts pediatric plan of care, as pediatric patients can become malnourished quickly.
Implements nutrition plan of care and works collaboratively with foodservice staff and milk techs to ensure conformance and continuation of said plan.
Functions as an integral member of the clinical interdisciplinary team and the Nutrition Therapy team.
Navigates wide network of pediatric formulas and additives and the corresponding companies to ensure tolerance and availability and patients fincial resources.
Works with case management and social work to identify available resources for formula supplies between WIC, insurance, and community programs. Documents need for each resource, how much will come from each resource, and assists with document completion for insurance, DME and community resource formula coverages.
Identifies goals and provides age-specific, culturally appropriate nutrition counseling and education to patients and their families/caregivers throughout the lifecycle.
Uses evidence-based nutrition practice guidelines and appropriate instructional methods and tools based on appropriate age groups.
Documents in medical record patient's and/or caregiver comprehension and anticipated compliance with nutrition guidelines in measurable terms. Completes Ad Hoc charting for in-patient.
Calculates special formula recipes for home and modifies as needed. Completes education with pt/caregivers, and documents formula education in the EMR.
Monitors, trouble shoots, and communicates outpatient issues and nutrition plan of care in EMR messaging when patients are between outpatient appointments and/or inpatient admissions.

Demonstrates performance measurement and quality improvement.

Aids and oversees students in preparing meals.
Work in an interdisciplinary position with the course director or other medical professionals to teach the nutrition/dietetic perspective of the course.
Responsible for teaching students safety in the kitchen, including but not limited to knife skills, dangers of cross-contamination, and food allergies
Works with Get Healthy UAMS (GHUAMS), Nutrition Services, Stocked n Reddie, and other entities/departments to educate the UAMS Community on healthy eating. This includes working with the UAMS Dietetic Interns to develop posters for health days (National Nutrition Month, etc) and to provide food samples, recipes, posters, and education materials to the UAMS community, videos, and food demos with GUUAMS and Stocked n Reddie and others.
Works with Little Rock and other communities to develop programs to educate the community on healthy eating. This may include the Mexican Consulate, the Arkansas Minority Health Commission, the Central Arkansas Library System, the American Heart Association, the American Cancer Society, and others.
Works with the UAMS CME department and the Culinary Medicine directors to develop CMEs on Culinary Medicine to educate not only the UAMS providers but also providers throughout the state. This includes presenting cooking demos and developing educational materials, including audiovisual aids, such as videos, PowerPoint presentations, brochures, etc.
Perform administrative duties as assigned.
Leads and/or participates in the writing and submission of grants
Works collaboratively with the Culinary Medicine sub-committee co-chairs to accomplish their goals.
Participates in the budgeting process as needed to evaluate all operations and processes for cost-effectiveness/savings
Training and workshops to meet the mandatory requirements of licensing and for professional growth.
Presentations as required.
Works collaboratively with all CM subcommittees (curriculum, community outreach, research, interprofessional, and CME).
