    Job Description Assist Director in menu planning and revision of cycle and holiday menu cycles. Record diet histories and food preferences by interviewing residents and families. Perform standard nutritional assessments; complete state and federally mandated data collection tools (MDS) within designated time periods. Provide diet instruction to residents and/or family members on prescribed diets. Record periodic nutritional care data in the medical record. Review and adjust therapeutic diets to reflect any changes in the daily menu and suggest the use of supplemental feedings when necessary. Assist in providing administrative direction for menu formulation, food preparation and service; establish programs, policies and procedures that will enhance the residents' nutritional needs. Coordinates both inter and intra departmental professional activities to provide optimum nutritional care for the residents and serve as consultant to clinical staff on matters pertaining to dietetics and nutrition. Attend and participate in Care Plan Meetings as designated. Maintain and update tray tickets for designated residents. Assist in development and delivery of departmental and facility-wide educational programs. Ensure that all clinical issues meet and/or exceed Federal, State and County regulations. Maintain rapport with residents, visitors, and family members and provide feedback on the overall resident attitude about food service. Provide Medical Nutrition Therapy (MNT) to patients of The Tradition of the Palm Beaches Medical Office as ordered by physician.
