About the Role
We are seeking a hands-on R&D Food Scientist to lead product innovation across our clean-label bakery and dough-based portfolio. This is a sole-contributor, highly technical role that collaborates directly with Sales and company leadership to design, test, and commercialize new baked goods and bread-style products.

Responsibilities
New Product Development & Innovation
Collaborate with Sales/Marketing and Innovation Engineering to develop new bakery and dough-based products, from early concept to successful commercialization.
Conceptualize, prototype, and refine formulations with a focus on bread, bakery items, dough systems, and clean-label ingredients.
Conduct plant trials and support full-scale production start-ups for innovation and renovation projects.
Customer Collaboration
Act as a technical partner to customer R&D, Culinary, and QA teams.
Present prototypes, discuss formulation strategies, and translate customer feedback into actionable development steps.
Formulation & Documentation
Maintain formulas, SOPs, and ingredient specifications in company systems.
Generate Nutrition Facts Panels and ingredient statements.
Drive change management for formulations, including issuing approved recipes and BOM updates.
Ingredient Sourcing & Supplier Interaction
Work with Procurement to identify, evaluate, and source bakery-appropriate ingredients that meet marketing, functionality, and quality requirements.
Liaise with corporate teams to verify new suppliers, raw materials, and conduct feasibility assessments.
Shelf-Life & Product Performance
Coordinate and conduct internal and external shelf-life studies for bakery and dough-based products.
Process Improvement & Cost Optimization
Review formulas to identify cost-saving opportunities without compromising product quality or performance.
Lead efforts to consolidate similar raw materials while maintaining product integrity.
Evaluate new processing technologies and functional ingredients that align with emerging bakery trends.
Cross-Functional Collaboration & Project Management
Manage development timelines and communicate progress to internal partners.
Work with Finance to build early-stage cost models.
Participate in co-manufacturing or third-party development when needed.
Serve as a key member of the NPD implementation team.
Technical Expertise
Reverse-engineer existing bakery or dough-based products for matching projects.

Qualifications
Bachelor's degree in Food Science, Microbiology, or related field; Master's preferred.
Minimum 5 years in product development, preferably in bakery, bread, doughs, cookies, crackers, tortillas, or similar categories.
Hands-on experience in bakery formulation, dough systems, fermentation (if applicable), ingredient functionality, and scale-up.
Understanding of formula costing and financial feasibility.
Knowledge of food safety programs (HACCP, GMP).
Familiarity with process capability, quality control, and ISO 17025 standards.

POSITION OVERVIEW
The Data & Research Associate will support the organization's efforts to develop, collect, manage, analyze, and report data that demonstrates program outcomes, the organization's goals and informs decision-making. BACKGROUND
The National Biodefense Analysis and Countermeasures Center (NBACC) is a one-of-a-kind facility located on Fort Detrick in Frederick MD and is dedicated to defending the nation against biological threats. Its work supports DHS and National biodefense preparedness planning, response, emerging threat characterization and bioforensic analyses. It is the first national laboratory created by DHS in response to biodefense gaps identified following the Amerithrax attacks of 2001 and has been operated by the Battelle National Biodefense Institute (BNBI) since 2006. Since its inception, NBACC and its staff have filled critical shortfalls in our scientific knowledge of biological agents needed to protect the public and defend the Nation from biological threats, whether naturally occurring, accidental, or deliberate and provided federal law enforcement with scientific data to support the investigation and attribution of biocrimes and protection of the US bioeconomy.
NBACC includes two centers: the National Bioforensic Analysis Center (NBFAC), which conducts the technical analyses in support of federal law enforcement investigations, and the National Biological Threat Characterization Center (NBTCC), which conducts experiments and studies to obtain data required for a better understanding of biological vulnerabilities and hazards. Together these centers offer a unique national resource for understanding the risks posed by biological agents and emerging technologies to inform biodefense policy and response planning and the operational capability to support the investigation, prosecution, and prevention of biocrimes and bioterrorism.
PRIMARY FUNCTION
Works with a team of scientists in the NBTCC at the NBACC to develop, manage and analyze research that addresses specific scientific questions of national significance in support of biodefense preparedness, response and recovery. Areas of research include a range of topics related to the physical, biological and/or pathogenic properties of viral or toxin agents. Work will be performed in select agent-approved state-of-the-art Biosafety Level (BSL) - 2, 3, & 4 and Animal BSL (ABSL) - 2, 3, & 4 facilities fully staffed and equipped with a wide range of technologies useful for biodefense and infectious disease research.
MINIMUM REQUIRED QUALIFICATIONS
Bachelor of Science (or equivalent) in a scientific discipline or engineering and a minimum of 4 years of related experience or a Master's degree and a minimum of 2 years of related experience.
Experience should include at least one of the following methods: mammalian cell culture; virus, pseudovirus, viral vector, or virus-like particle propagation and titration; cell-based assays and laboratory automation; immunostaining of cells; PCR/qPCR/RT-qPCR/dd PCR; next generation sequencing; heterologous protein expression; solid phase peptide and protein synthesis; cell-based toxicity and/or electrophysiological assays; affinity and/or native protein purification and quantification; high performance and/or fast protein liquid chromatography.
Experience supporting laboratory logistical functions (e.g., reagent and supply inventory, purchasing, coordination of instrument maintenance, laboratory upkeep and organization) is required.
Intermediate scientific proficiency in laboratory functions. Possesses the ability to identify issues with laboratory protocols, procedures, and experimental plans.

Performs basic and specialized molecular biology techniques towards the engineering of synthetic bacteriophages and bacterial genomes with limited supervision of the scientific investigator. We are seeking a Research Associate to support and advance HITT's research and reporting efforts. The primary responsibility of this role is collecting and analyzing data, then translating the research into meaningful reporting.
As part of the Chief of Staff team, you will monitor industry trends and economic indicators, track company performance, and deliver insights that help the organization anticipate and respond to changes in the market. This includes producing recurring reporting deliverables and dashboards, as well as ad-hoc analysis that is accurate, clear, and actionable for timely strategy discussions and special projects.
This position reports to the Operations, Senior Associate Chief of Staff, positioning research and reporting closely alongside enterprise business planning and strategy. The ideal candidate is an analytical thinker and strong writer who thrives in a fast-paced environment and enjoys working with data. They demonstrate the ability to translate complex concepts into clear, accessible terms and have a strong attention to detail to ensure the production of polished, high-quality outputs for both internal and external audiences.
Responsibilities
Corporate Reporting
Coordinates and prepares the bi-annual board report, including data collection, writing, editing, and formatting deliverables in Adobe InDesign and PowerPoint
Conducts ad hoc business research and analysis to support decision-making, special projects, and strategy development at the request of our principal leadership team (PLT)
Supports the development of processes and workflows that improve the efficiency and consistency of research and reporting
Assists with the upkeep of operations market insights, collaborating with the Operations Senior Associate Chief of Staff to provide accurate, timely information and highlight potential risks
Market Research & Analysis
Monitors industry and economic trends by proactively tracking data sources, reviewing publications, and analyzing market activity
Prepares bi-annual market reports that synthesize research and analysis of global and U.S. markets, economic trends, material pricing, and industry conditions
Assists with the preparation of presentations and other content that translate research findings into clear, actionable insights for internal and external audiences
Maintains a library of research resources and data to ensure information is organized, current, and easily accessible for reporting needs
Qualifications
A four-year degree from an accredited university is preferred
A minimum of 2-4 years of related experience in research, data analysis, project management, or related fields
Foundational knowledge of commercial construction and real estate markets, including awareness of factors such as material pricing, supply chains, and economic conditions, is preferred
Software proficiency-advanced level of proficiency with:
Microsoft Office suite (i.e., Excel, Word, Outlook, PowerPoint, etc.)
Adobe InDesign (and other Creative Cloud platforms)
Familiarity with CoStar
Proven track record of multitasking projects and meeting deliverables in a fast-paced environment
Tech savviness, an eye for detail, and meticulous organization skills
A high level of professional maturity and a solid work ethic
