Basic Job Function:
This position is generally responsible for supporting the Steward Manager with the sanitation duties and day to day operation in the Stewarding Department. Contribute to the profitability and effective operation by controlling china, glass, silver and equipment on a daily basis. Promote the Sea Island legacy of warm genuine hospitality while upholding and ensuring compliance with all company and departmental policies and procedures.
Use of Company Vehicle: Not designated to drive a company vehicle.
Minimum Requirements:
Minimum two (2) years experience in stewarding in a luxury hotel or resort
Supervisory experience preferred
Knowledge of food preparation and sanitation procedures
Must possess or obtain Serv-safe certification within a three (3) month period from hire date as a condition of continued employment
Excellent communication skills, both written and verbal
Spanish communication skills preferred
Good knowledge of inventory control, food sanitation, health and safety regulations and hazardous chemical procedures
Ability to understand and follow safety requirements
Knowledge of chemical use and Material Safety Data Sheets (MSDS) rules
Basic computer skills in Windows XP and Microsoft Office software applications such as: Word, Excel, and Outlook
Proficient with peripherals, copier, fax, and telephone
CPR certification preferred
First Aid certification preferred

Tasks/Responsibilities:
Prepare schedule (including vacation schedule) for stewarding department
Assist in monitoring payroll daily to control labor expenses
Responsible for training all new hires
Assist manager with discipline actions
Maintain a weekly breakage report and review with manager on weekly basis
Assist with end of the month inventories on china, glass and silver
Monitor, order and issue all cleaning supplies to stewarding department
Assist with weekly kitchen inspections to ensure area meets or exceeds Health Department Rules and regulations
Develop and administer procedures for maintaining inventories of china, silverware and glassware
Generally responsible for all the kitchen(s) sanitation on property
Ensuring appropriate transportation of banquet food and equipment to and from events
Follow the rules/regulations of food transportation to protect from contamination and spoilage of food
Properly clean and store all china, silver, utensils, pots, pans, serving ware and other equipment
Review mis-en-place form and communicate needs for china, glass, silver and other special equipment if needed
Perform sanitation duties such as mopping floors, cleaning work surfaces, emptying trash containers, sweeping floors, etc.
Maintain equipment in a professional manner and maintain a clean, safe and efficient work station
Report equipment break downs and safety concerns to Manager
Communicate with the Chef on delivery time for food and equipment needed for events
Ensure that food and equipment is set up prior to the event based on the standard set for having receptions or buffets set up
Ensure that all cocktail parties and receptions are set up with props
Inform the Chef on duty of additional food requirements, restocking of food
Break down and return food & equipment to the assigned areas
Ensure that all food is returned to the Chef for inspection and that all equipment is clean and stored properly
Maintain equipment in a professional manner and maintain a clean, safe and efficient work station
Assist and partner with the Security department in maintaining Occupational Safety & Health Administration (OSHA) standards
Handle chemicals safely following all Material Safety Data Sheets (MSDS) procedures
Assist with maintaining current MSDS files
Maintain a thorough knowledge of current guest services, activities, dining options, shops, local attractions, and historical information regarding Sea Island and the surrounding area to answer any questions guests may have to the best of one's ability
If applicable, complete a Guest Problem Resolutions (GPR) form on any issues (solved or unsolved issues) and follow-up on issues as needed (if computer access is not available give information to admin support)
Maintain cleanliness and organization in all work areas
Uphold appropriate departmental standards of quality/timing
Uphold and ensure compliance with all company and departmental policies and procedures
Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to supervisor immediately
Attend all scheduled employee meetings and bring suggestions for improvement
Willing and timely execution of other duties as delegated by leadership
Physical Requirements:
Ability to kneel, crouch, squat, climb, stand, sit, balance, reach, bend, push, pull and walk for prolonged periods
Ability to change work locations during the same shift
If applicable, must have the ability to work for extended time periods in an outdoor environment, including sun, heat, cold, wind, rain, and higher than normal noise levels

Job Description
This position is responsible responsible for assisting in the supervision of all aspects of the Stewarding Department functions, in accordance with hotel standards.
Assists in directing, implementing, and maintaining a service and management philosophy that serves as a guide to respective staff. Includes keeping outlets, kitchen and banquet well supplied with equipment.
Responsibilities
* Maintain complete knowledge of:
* Anticipated business levels in each outlet per meal period.
* Daily housecount.
* Scheduled in-house group activities, locations, and times.
* Correct maintenance and use of equipment.
* All department policies/service procedures.
* Correct chemical handling procedures.
* Inspect all work areas and document discrepancies to be rectified. Develop action plan if needed.
* Inspect quality of work performed by Night Cleaners and resolve deficiencies. Ensure scheduled cleaning tasks are completed within specified time frames. Communicate status of service company with Executive Chef.
* Meet with the Executive Chef and review the kitchen needs daily.
* Maintain close communication with F&B Managers, working to supply their equipment needs.
* Review kitchen and restaurant service needs from Stewarding throughout the shift and ensure that all requirements are met according to specifications.
* Accommodate requests for additional wares expediently and courteously. Follow up on delivery of all such items.
* Review BEO's at weekly meeting and resolve discrepancies. Determine staffing level and equipment needs. Prepare equipment set-up sheets and ensure follow through on banquet support needs required from Stewarding.
* Establish par levels and storage requirements for supplies and equipment. Complete requisitions to replenish shortages or additional items needed for the anticipated business.
* Check storage areas for proper supplies, organization, and cleanliness. Instruct designated personnel to rectify any cleanliness/organization deficiencies.
* Ensure that all items are stored in accordance with state/local health and fire departments regulations and according to hotel requirements.
* Establish cleaning schedule for all tasks to be completed on a daily/weekly/monthly/quarterly basis, ensuring that all areas are routinely cleaned.
* Develop checklists for employees to follow when completing scheduled cleaning tasks.
* Establish and monitor compliance with recycling/conservation specifications.
* Prepare weekly work schedules in accordance with staffing guidelines and labor forecasts. Adjust schedules throughout the week to meet the business demands.
* Ensure that staff reports to work as scheduled.
* Coordinate breaks for staff.
* Assign work duties to staff in accordance with departmental procedures. Communicate additions or changes to the assignments as they arise throughout the shift. Identify situations that compromise the department's standards and delegate these tasks.
* Conduct pre-shift meeting with staff and review all information pertinent to the day's business.
* Inspect grooming and attire of staff; rectify any deficiencies.
* Inspect, plan, and ensure that all materials and equipment are in complete readiness for service; rectify deficiencies with respective personnel.
* Constantly monitor staff performance in all phases of service and job functions, ensuring that all procedures are carried out to departmental standards; rectify any deficiencies with respective personnel.
* Monitor all work areas for compliance with health regulations and follow through on any violation.
* Monitor and ensure that all temperature and chemical solution requirements are met about dishwashing, pot washing and storage.
* Monitor and maintain pest control requirements in accordance with hotel standards.
* Assist Stewarding Staff with their job functions where needed to ensure optimum cleanliness and service standards.
* Monitor and ensure that Stewarding staff follows safety practices.
* Establish a preventative maintenance program for all machinery and maintain accurate records of such.
* Identify dish machine problems by inspecting washed wares; resolve problem situations.
* Ensure that all maintenance and repairs to machinery are conducted per warranty/ manufacturer's specifications. Maintain accurate documentation of all service repairs.
* Prepare contingency plans for equipment that cannot be repaired immediately.
* Contact Engineering for maintenance repairs to be submitted to Synergy for Engineering. Contact Engineering directly for urgent repairs.
* Be familiar with all hotel services/features and local attractions/activities to respond accurately to any guest inquiry.
* Monitor and handle guest complaints by following the Power of Engagement and ensuring guest satisfaction.
* Ensure all closing duties for staff are completed before staff signs out.
* Conduct ongoing training with existing staff.
* Provide feedback to staff on their performance.
* Foster and promote a cooperative working climate, maximizing productivity and employee morale.
* Respond to all calls on your hotel issued 2-way communication device promptly.
* Document pertinent information in department logbook.
