**2)** Able to perform all five main dish-room tasks. Tray assembly, cart delivery/retrieval (that includes knowledge of all units in hospital), tray removal, loading and unloading. Use of conveyor-type dish machine.
**3)** Accurately assembles patient meal trays that are in compliance with diet orders and food allergies. Practices safe food handling including maintaining appropriate food temperature, hand washing and personal hygiene. Utilizes First In, First Out rotation system.
**4)** Maintains temperature, QC and QA logs as directed by HACCP, JCAHO and DPH regulations, and Executive Chef or designee directives.
**5)** Cleans and sanitizes all equipment and floors at end of night or shift. Safe use of chemicals used in dish room. Follows Quality Assurance charts for accurate ratio of water to chemicals used for sanitizing where applicable.

Summary:
Cross-trained to do all FSA/ Café/ Functions and Room Service Production Duties. Performs general services and support duties within the Patient Services area, including but not limited to serving food, station set-up, break-down, and clean-up, food station prep and loading patient trays onto food trucks/delivering food trucks to the various patient floors, collecting trash and discard as needed, wash pots and pans. Also is trained in Room Service Production area, and can distinguish quality preparation and products. Also has been trained in Proper preparation methods. Incumbent is required to use good service techniques, proper food handling techniques and proper sanitation procedures. Reports any situation/opportunities to the Supervisor.
Job Responsibilities:
1) Maintains a sanitary environment in the work area. Clean and sanitize all work areas after performing job tasks in accordance with National Restaurant Association Guidelines. Clean and sanitize all equipment and utensils after completing a job routine. Follows NRA standards for separation of raw/cooked uses. Maintains clean environment of workstation throughout shift, including cabinets, counters, shelves, etc. Promote the environment of the department (food quality, cleanliness, etc.).
2) Practices proper infection control. Properly washes hands in accordance with departmental infection control standards. Follow the correct procedure in using hair restraint as identified in department infection control standards. Maintains neat and clean uniform and self, as observed by supervisor and perceived by customers/patients. Uses gloves in proper situations when preparing ready-to-eat products. Follows the Safe Procedures for using knives, and for Sanitizing of all equipment after uses to prevent Cross Contamination..
3) Sets up and maintains work station for serving customers/patients correctly. Gathers all tools and necessary equipment needed to operate individual station according to departmental guidelines. Operates individual work station within specified time frames as published in job outlines posted on department bulletin boards. Maintains proper stock of food, dishes, and serving utensils, and promptly re-orders and re-supplies depleted items with no more than 3-5 interruptions in service per year.
4) Develops and maintains good interpersonal relationships. Maintains effective working relationship with peers, guests and other hospital employees that reflects mutual respect, professionalism and courtesy. Promotes good rapport with customers, guests and patients.
5) Responds to departmental staffing needs. Employee identifies a need to assist a customer, and utilizes resources within his/her authority to help. Employee anticipates operational needs of the department and displays teamwork in assisting fellow employees. Employee demonstrates flexibility in being moved from one assigned position to another to achieve proper departmental productivity. Job Summary
'- Serves meals to patients in a professional, courteous and efficient manner - consistently Adheres to hospital regulatory Requirements, including proper use of patient identifiers and Hand hygiene practices - Instructs patients on meal Ordering system Following an established script - Delivers the correct menu and related inserts (diet compliant) to patients in a timely manner - assists patients and/or family members in placing meal Orders as needed - assesses each patient's ability to Utilize the meal Ordering system and Follows up with appropriate staff member If patient unable to Participate - Delivers between meal nourishments directly to patients - Expedites changes and/or diet compliant substitutes per patient requests - for diabetic patients, informs Nursing that tray has arrived and of intent to deliver - Adheres to established infection control and isolation precaution policies - Retrieves completed meals from patients' rooms in a timely manner - records nutrient intake from meals for patients on physician-ordered calorie counts - Demonstrates speed, accuracy, and ability to work calmly under pressure - Acts as liaison between the Nutrition and Food Service Department, the patient and the nursing units - Enters meal orders into CBORD - Mediates and takes ownership of patient concerns regarding meal service, ensuring resolution - Serves as a quality assurance control point for every aspect of the Room Service program - Maintains open communication with Call Center Representatives regarding patients food requirements - Assumes the role of a patient advocate with respect to the Room Service meal delivery system - Complete nourishment kitchen stock sheets and faxes or hand delivers to the Call Center - Restocks food and non-food items according to established par levels stated on the nourishment kitchen stock sheet. Rotates perishables per departmental policy. Checks and records refrigerator temperature. - Checks all assigned nourishment kitchen temperatures and fills out logs - Completes nourishment kitchen stock sheets and faxes or hand delivers to the Call Center. - Keep all nourishment kitchens cleaned and organized. - Records calorie count information and gives to Dietary Call Center personnel - Communicates with nursing and Food Service staff information that can improve meal service to patients - Helps load and transport food trucks for patient tray service, as needed. - Ensures that the food on the patient tray corresponds to the diet order and is listed on the tray ticket. Identifies potential problems and acts accordingly to follow through, including informing appropriate staff members. - Performs other duties as requested
Qualifications
* High school or vocational school graduate preferred, some college preferred. - 3-5 years of food service experience preferred. - Knowledge of food service kitchens, including standards of safety and cleanliness. - Demonstrates strong communication skills, including the ability to read and understand English. Must be able to comprehend and take appropriate action quickly. Must be able to communicate in written and verbal form with clarity and professionalism. - Ability to work independently, completing assigned tasks safely and correctly, demonstrating good time management skills. - Ability to follow through on instructions - Ability to demonstrate excellent customer service skills, ensuring all actions reflect program's service goals. Job Summary
SHIFT: Saturday and Sunday, 7:00am-3:30pm, and one 4-hour weekday shift.
The Food Service Assistant is responsible for performing a variety of food preparation and cleaning functions in the cafeteria, kitchen, and dishwashing areas. The Food Service Assistant maintains the facilities at an optimal level of service, cleanliness, and orderliness and maintains the kitchen and other food service locations within the hospital at a high level of cleanliness in order to avoid the risk of food borne illness and cross contamination of food.
This position is part of the 1199SEIU Bargaining Unit at Cooley Dickinson Hospital.
This position reports to the Executive Chef and operates within established organizational and departmental policies and procedures.

* Prepare and set up salad bar, deli station, dessert cabinets, beverages, baked goods, etc.
* Obtain and place dishes, silverware, hot and cold food, baked goods, beverages, desserts, and condiments.
* Set up board menu to reflect current menu.
* Serve food as directed.
* Greet all customers promptly and courteously. Receive payment for food and drinks from visitors and staff.
* Set up register and equipment. Cash out drawer at end of shift and put money in safe as directed.
* Wipe off counters, tables and chairs; arrange, rearrange, and replenish items as needed.
* Assemble prepared foods on patient trays for regular and modified diets from patient menus. Consistently place food items in proper area of tray or plate in a neat and orderly manner. Check for missing items and inform the starter and tray line checker of those items. Prepare special nourishments and requests by properly following instructions of all mixtures.
* Deliver patient trays and supplies to rooms and/or floors.
* Act as a communicative representative between Nutrition Services and Nursing on behalf of the patient by listening, communicating problems or questions and visually monitoring the quality control of meal trays.
* Perform duties assigned on cleaning schedules daily. Check work areas, sinks, or other areas for sharp knives or objects that may be dangerous to employees.
* Dispose of trash and boxes in their proper disposal locations.
* Sweep, mop, and rinse floors utilizing proper chemicals and techniques as outlined in department policy manual.
* Use proper hand washing techniques, duration, and frequency to maintain a high level of personal sanitation.
* Utilize proper cleaning and sanitizing methods for all kitchen equipment according to sanitation schedule. Follow all cleaning assignments according to instructions, policies and procedures set forth.
* Place and rotate all supplies to meet the department requirements.
* Service patient tray areas by transporting patient meals in an efficient and effective manner consistent with department goals and objectives.
* Maintain working knowledge of chemicals and their proper use. Follow all safety requirements according to cleaning product description. Know location of MSDS (Materials Safety Data Sheets) and application of use. Use disposable gloves while using chemicals and other protective gear as specified by chemical.
* Check ovens, counters, and equipment to ensure all particles are removed; clean areas or equipment as needed and/or by cleaning schedule.
* Return any chemicals or supplies etc. to the chemical storeroom and place labeled chemicals in proper storage areas.
* Prevent cross-contamination of counters and/or equipment and do not handle them after stripping dirty equipment and areas.
* Stock items in a manner which meets all regulatory and department policies. Inform supervisor of any shortages in supplies. Practice back safety while lifting food supplies to their proper location.
* Transport carts, trays, and food items to patient care floors on an as needed basis to ensure food is delivered in a timely manner.
* Return carts, trays, and other utensils to the kitchen at designated times and on an as needed basis.
* Start dish machine; fill up all tanks, check soap and rinsing solution to ensure proper operation. Operate dish machine according to instructions, policies and procedures set forth.
* Set up dish room, lowerators, and storage bins; use clean gloves and gown to receive clean dishes and put in their proper storage bin. Check clean dishes to ensure all particles are removed.
* Clean stripping area; dish machine, food trucks, and any carts. Sanitize specified equipment. Return equipment to its respective station.
* Assist in patient tray line assembly and/or catering events under direction of supervisor.
* Maintain sanitary work areas in order to avoid the risk of food-borne illness and cross-contamination of food. Use proper hand washing techniques and procedures and maintain a high level of personal sanitation. Always observe sanitation procedures before handling utensils or food items, always use disposable gloves while handling food, changing them according to department policy.
* Label food items properly. Check expiration dates on food and restock units in timeframes established.
* Establish par levels and ensure station areas are stocked and ready at specified daily time consistent with department goals and objectives.
* Assist with care and maintenance of department equipment and supplies.
* Place and rotate all supplies to meet department requirements.
* Maintain department records, reports, and files as required, including stockroom requisitions.
