THE LIFE OF A TECHNICAL PROJECTS CHEF
As our Technical Projects Chef, you ensure we are meeting our mission to provide our members with consistent, well-prepared, and diverse cuisine. You do this by fostering a culture of education, professionalism, and passion in each team member. The role of Technical Projects Chef develops and executes creative specialty items such as crafting dry-cured artisanal charcuterie, dry-aged Wagyu beef, fresh-squeezed Florida citrus juices, hand-cranked sausages, corned beef, pastrami, pickles, and sauces from scratch. You will have the ability to collaborate on special projects with Chef to integrate innovative menu items. Upon development in this position, you will work autonomously and use your creativity to develop new specialty items to incorporate into our daily menu. While supervising and coordinating all specialty food preparation and presentation, you will ensure excellent quality. As a Technical Projects Chef, you will be working normal A.M. hours.
We want you to be able to focus on your creativity! You utilize your innovation to create new menu items and special courses for wine dinners. Using contemporary techniques, you prepare, test, taste, and control all new items. We also encourage our culinary team members to post pictures to social media of plated entrees, large banquets, ice displays, or anything else that you're proud of producing with our team (#bbculinary). QUALIFICATIONS
- Extended and diversified kitchen and hospitality industry experience
- Exemplary technical skills related to food preparation.
- Displays creative and innovative methods.
- Ability to pay strict attention to culinary details and Club/Kitchen standards
- Maintain professional and positive relationships with kitchen staff
- Ability to work in a fast-paced environment
- Interest in ACF certification
- Ability to meet physical requirements of the position such as spending long periods of time on your feet, in hot weather, and the ability to carry up to 50 lbs
- Ability to pass a drug test
- Reliable transportation
