Overview:
Rice University is seeking an experienced Executive Chef to lead the culinary operations in the Housing and Dining Department. The successful candidate will be responsible for planning and preparing a wide variety of foods, directing the preparation of foods in a servery, and supervising a team of culinary staff.
Responsibilities:
* Plan and prepare a wide variety of foods, direct the preparation of foods in a servery
* Supervise a managing chef, sous chefs, pastry chef, and approximately 25 production staff
* Handle all aspects of culinary staff management, including interviews, orientations, training of new staff, cross-training of existing staff, and conducting annual employee performance evaluations
* Maintain unit in full compliance with City Health Code, guide cooking staff in proper methods of sanitation and safety
* Direct and guide all cooking staff in proper methods of food preparation, cooking, portion control, and sanitation
* Create recipes, menus, and upgrade menu files
* Monitor financial performance, analyze variances, and implement corrective actions to meet or exceed budgeted goals
* Manage inventory rotation and utilization of products
* Manage assigned budget and P&L statements within established financial guidelines
* Complete weekly food and supply inventories, order food and beverage products, make suggestions for menu pricing, and recommend and implement cost-saving measures
Qualifications:
* Associate's degree (culinary arts from an ACF-accredited program preferred) or additional related experience, above and beyond what is required, on an equivalent year-for-year basis
* Experience: 4+ years as an ACF Certified Executive Chef (CEC) or additional related education, above and beyond what is required, on an equivalent year-for-year basis
* Strong leadership and management skills, with the ability to inspire, motivate, and mentor chefs at all levels of experience
* Excellent verbal and written communication skills, with the ability to effectively convey complex culinary concepts and techniques
* Meticulous attention to detail and a commitment to upholding the highest standards of quality, professionalism, and integrity
* Ability to collaborate effectively with cross-functional teams, including culinary, HR, and senior management, to achieve program goals and objectives
