The Mixer Operator assembles ingredients, portions, weighs, and formulates according to customer specifications. This position operates a computer-controlled mixing system producing dough products. Daily tasks include recording of ingredient lot numbers, weighing and combining product ingredients using a scale, physically putting ingredients into a 1,000-pound-capacity mixer, recording mix times, dough temperatures, moisture percentages and other data on paperwork, programming mixer settings using a function-key-style computer terminal, washing/rinsing/sanitizing equipment, mixing water and dry yeast to produce yeast slurry used in dough production, shoveling ice into large bins for use in dough mixing.
Job duties and responsibilities
Control the flow of allergens in the Sheeter room.
Control accurate formulations, document lot numbers, raw dough temperatures, and dough moisture percentages.
Make ice formula adjustments as necessary, communicating to the bakery lead if a product is not meeting its specification.
Understands the Personal Protective Equipment (PPE) requirements.
Takes a macro approach to the overall operation of the dough room.

Working Conditions
The position will be in steel slitting facility using machines, hand tools, and forklifts. The shop floor is not climate controlled, so at times it will be hot/cold. Proper PPE is required, including steel/composite toed shoes, arm guards, gloves, and safety glasses.
