TCHO is looking for a rare professional to serve as the tactical engine of our research and production. This individual will fill a high-impact role that bridges the gap between creative sensory exploration and technical production. This is a hands-on role at our factory, responsible for tending the entire lifecycle of our chocolate. This begins with the cacao beans being grown around the world by our farmer partners, to the final production of high-end chocolate and confections at our production facility in Berkeley. 1. Sensory Mastery & Tasting
Daily Analysis: Lead disciplined daily sensory panels of raw cacao liquors, experimental batches, finished chocolate, and confections to ensure every product meets TCHO standards.
Raw Material Selection: Participate in the selection and sensory analysis of all raw materials, including cocoa beans, liquor, powder, butter, and inclusions such as nuts or vanilla.
Final Sign-off: Provide sensory sign-off for final products coming off the line to ensure manufacturing quality and consistency.
2. The “Source” & Laboratory Management
Bean Sample Management: Manage the intake of cacao samples from global partners, including roasting, winnowing, and grinding micro-batches to evaluate fermentation quality and genetic potential.
Flavor Lab Oversight: Manage daily operations of the flagship TCHO Flavor Lab space (one of only 12 worldwide).
Operational Upkeep: Oversee lab organization, cleaning, sample retention, and restocking of laboratory supplies and equipment.
3. Production, Formulation & Retail Confectionery
Formula Creation: Develop and manage proprietary daily production formulas used by the manufacturing team.
Retail Confectionery Production: Act as a Confectioner for TCHO Retail, responsible for creating small-batch and small-lot confections for retail customers, including hand-crafted and limited-run items.
Efficiency & Scalability: Support factory operations by optimizing run times, flush materials, FIFO practices, and small-batch scalability.
SOP Compliance: Ensure all product SOPs are followed, including requirements related to cross-contamination, Organic, Kosher, and Fair Trade certifications.
4. New Product Development (NPD)
Dream-to-Reality: Translate creative product concepts into consistent, repeatable production.
Prototyping: Execute hands-on prototyping and produce sales and retail samples, including chocolate formulas, plant-based ganache, enrobed items, panned goods, and other confections.
Scaling: Move products from lab-scale concepts to small industrial and retail-ready production.

About the Role

You will work closely with the research, fleet, silicon, hardware health, and external vendors and partners to accelerate system qualification, increase deployment velocity, and improve platform and fleet robustness at scale. Job Description
What You'll Do
You'll be a core driver of our field research program-designing trials, gathering insights, and translating real-world results into global impact. Your work may include:
* Designing and executing field trials that support product development and regulatory strategies
* Collaborating with growers, researchers, and internal teams to generate high-quality data
* Developing trial protocols and contributing to scientific and regulatory reports
* Managing timelines, field resources, and data systems that keep our work moving forward
* Traveling throughout California to oversee field activities and support demonstrations
Qualifications
What You Bring
You don't need to be perfect-you need to be passionate. We're looking for someone who has:
* A degree in agriculture, biology, entomology, or a related scientific field
* Experience thinking critically in dynamic field settings
* Strong data instincts-collecting it, interpreting it, and translating it into insights
* Excellent communication skills and the curiosity to explore new ideas
* Confidence working independently, paired with an appreciation for multidisciplinary teamwork
* Flexibility to travel, troubleshoot, and adapt as conditions change
* A CA DPR QAL or the ability to obtain one within 3 months
What Sets You Apart
* Knowledge of pest management, experimental design, or pheromone-based technologies
* Experience with international trial standards or regulatory systems
* Spanish language ability
* Familiarity with statistical tools, GIS platforms, or digital data systems

QC Chemist - Night Shift
The primary purpose of this position is to perform required quality control analysis of incoming, manufactured, and outgoing material. Provide technical support to production and sales and ensure all Quality Assurance/Quality Control practices and procedures are followed. This position will uphold the Hydrite "Standards of Excellence" through continuous commitment to customer satisfaction, both internal and external.
Primary responsibilities include:
Perform required quality control analysis of incoming, manufactured and outgoing materials with authority to make acceptance, production adjustments or rejection decisions.
Perform instrument maintenance, calibrations, quality control checks, solution preparations and standardizations.
Maintain records accurately, neatly, legibly and completely.
Prioritize and perform daily laboratory activities to help meet production requirements.
Assist in addressing customer product complaints and returns through investigation and analysis and process laboratory portion of paperwork. Suggest corrective action.
Assure timely technical support to production in regards to manufacturing adjustments and quality issues.
Assure timely response of material acceptance/rejection decisions.
Maintain a clean and neat laboratory at all times; clean glassware.
Perform and complete analysis, projects, analytical developments and revisions of quality policies as assigned by supervisor or manager.
Communicate concerns about standard lab practices, operational concerns or problems, quality trends, continuous improvement opportunities, etc.
Promote complete customer satisfaction through quality and service to both external and internal customers.
Report food safety problems to supervisor or SQF Practitioner upon observation of a known or potential issue.
Perform all duties outlined in relevant SOPs and all other duties to be assigned.
Uphold Hydrite's Standard of Excellence through a continuous commitment to maintain quality facilities and provide quality products and services to internal and external customers.
Participate in RCRA, regulatory, health & safety and process training activities as required. Review changes/additions with your supervisor. Must be RCRA compliant.
Perform administrative duties which include the generation, distribution and filing of Certificates of Analysis.
Maintain analytical capabilities.
Manage any waste in accordance with applicable SOPs, including labeling, storage, and profiling.
Participate in HACCP Food Safety team and SQF requirements/activities.
Work with other staff members to maintain workload balances. Provide back-up support as necessary.
Support effective communication with all Hydrite departments where responsibilities overlap to ensure success of the branch team.
REPORTING STRUCTURE
This position reports to the Quality Lab Manager.
PREFERRED EXPERIENCE
Minimum four-year (Bachelor's) Degree in Chemistry or a related science, or equivalent experience.
Must possess good laboratory analytical skills.
Must have good presentation and interpersonal skills, including ability to communicate in English.
Must be self-motivated and initiate continuous improvement.
Ability to perform multiple tasks.
Must have communication and interpersonal skills, along with the ability to read, write, and speak English.
