Servers must be fully dressed in appropriate uniform before shift begins. Must know and fully understand the menu. Before the start of each meal period become knowledgeable of any specials. This would include ingredients and how entree is prepared. Serve all food & beverage orders promptly. Examine your order before you leave the kitchen. Be certain all guests' special instructions have been fulfilled. Make sure all related items needed to serve that course are in place or remove items when they are not being used. For example: If guest does not have soup - remove soup spoon Make sure place setting is complete for next course Once guest is finished each course remove plates Remove pepper after entree is completed Inquire if guest wishes to have dessert, set table accordingly After the last course if finished the only thing that should be remaining on the table is the water glass or coffee/tea cup Remember when you are not tending to other guests you should remain on the cafe floor until guest has left your assigned serving area.
