Prepares prep items according to guest request within company standards and following food safety and sanitation procedures. Controls Food Cost Ensures products are accurately portioned and ensures food products are prepared as specified by recipes. Utilizes FIFO (first in first out) standards when preparing items. Maintains Cleanliness Maintains cleanliness of the kitchen, prep areas, coolers and storage areas Follows proper safety procedures and policies concerning food handling, rotation and storage Conducts line sweeps throughout the shift “Clean as you go” throughout the shift Understands OSHA requirements and health department standards Cleans all equipment on line and other areas as directed by the Kitchen manager or Manager on duty. Anticipates, identifies and corrects system breakdowns to achieve maximum guest satisfaction. Communicates with Manager on Duty and coworkers regarding product/service deficiencies, equipment, safety problems. Etc. Keeps General Manager and Manager on Duty informed of problems and/or issues and proposes alternative solutions for consideration. Maintain a professional company image by adhering to all grooming and uniform guidelines, including slip resistant shoes. Collect used kitchenware from dining and kitchen areas. Load and unload dishwashing machines. Wash items in 3 compartment sinks, when dishwasher is unavailable. Store clean dishes, glasses, and equipment appropriately, following Food Safety and Sanitation Guidelines. Set up workstations before meal prep begins. Ensure there are always enough clean dishes, glasses, utensil, and equipment, especially during peak hours. Maintain cleaning supplies stock (e.g. detergents.) Check dishwashing machines' operation and report any technical/performance issues to management. Remove garbage regularly. Sanitize the kitchen area, including the floor. Must go above and beyond for guests and other team members. Enthusiastically supports decisions once they have been made by management. Ability to take direction and collaborate in a team environment. Follows health, safety, and sanitation guidelines. Maintain a clean organized work environment that is free of safety hazards which may include sweeping and mopping. Accountable for compliance with all local, state, federal laws, and regulations including those relating to food safety. Perform other duties as assigned. Qualifications EDUCATION, EXPERIENCE, CERTIFICATIONS: High School diploma or GED Food and Beverage experience is preferred but not required ServSafe Certification, or equivalent, preferred. Ability to take direction and collaborate in a team environment. Ability to work in a high energy and demanding environment. Good communication skills and the ability to work independently as well as with other team members Able to work unsupervised for extensive periods, and to demonstrate good judgment when dealing with customers and peers. POSITION QUALIFICATIONS: Ability to work various shifts in a 7/365 team-oriented environment. Excellent customer service skills and an ability to communicate effectively, in English. Strong self-motivation, and organizational skills. Positive interpersonal skills. Self-starter able to prioritize and handle various tasks simultaneously. Ability to adapt to changing priorities and unexpected situations. Ability to lift a minimum of 25 lbs. perform essential job functions such as standing, bending, reaching, gripping, climbing on a ladder, and walking long distances. Standing for long periods of time and the ability to work in an environment with varying including conditions high heat steam, and varying odors.
